Easy to make and full of Middle Eastern spices, this Vegan Lebanese Shawarma Salad is a fun twist that’s sure to hit the spot for shawarma lovers everywhere. Crisp Romaine lettuce, refreshing cucumbers, sweet tomatoes, zesty red onions, hearty chickpeas, and zingy pepperoncini are coated in a delightful Lebanese Shawarma hummus-based dressing that is definitely something to write home about.

This salad is so easy to make and utterly delicious. It’s a nod to all those fragrant and tasty shawarma spices but in a healthy, nourhisng, and flavorful salad form
Don’t forget to load up on those yummy pepperoncini (or pickled turnips) as they totally make the salad in our humble opinion. You can leave them out, of course, but we don’t recommend it. 😊

Tips for Success:
- Flavor Profile: The flavor profile of this salad is based upon Lebanese Shawarma spices. Shawarma spices are heavier and really come through in this dressing. This salad is designed specifically for folks who love shawarma spices. This salad is delicious, all the fresh garden ingredient come through. Because we use no oil, the flavors are not weighed down and all those fantastic Lebanese Shawarma dressing spices come through beautifully.
- Base Salad Ingredient Amounts: We suggest not using more than the indicated amounts or you could end up with a dry salad.
- Romaine Hearts: We used 3 heads of Romaine Hearts (lettuce). The average weight of each Romaine heart was between 8 to 10 oz.
- Red Onions (or Pickled Red Onions): Middle Easterners love their pickled red onions. You can use either red onion slices or pickled red onions in this salad. We used fresh red onion slices.
- Sliced Pepperoncini: While we indicate the sliced pepperoncini is optional, it really adds some extra flavor and zing to this salad. Our suggestion is not to leave it out.
- Hummus: We used our hummus recipe – The Best Hummus. Please feel free to use your favorite hummus recipe or store-bought hummus.
- Dressing the Salad: We strongly suggest adding the dressing only to the portion of the salad that you plan to consume in one sitting as the salad ingredients tend to really soak up the dressing and mellow it out the flavor over time. The refrigerated leftovers flavor will not be as vibrant.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
Leftovers and Freezing:
Leftovers will generally keep for 5 days in the refrigerator, undressed Store in a covered container.
This dish cannot be frozen.
Pantry Products Used:
- Sliced Pepperoncini: We used Divina Sliced Pepperoncini. These pepperoncini are Whole Food Plant Based, no dyes are included. They have amazing flavor. Feel free to use your favorite sliced pepperoncini in this salad.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Ingredients
Base Salad Ingredients:
- 3 heads romaine hearts lettuce, chopped *
- 3 mini cucumbers, diced
- 1 ½ cups grape/cherry tomatoes, halved
- 1/3 cup red onions, thinly sliced (or pickled red onions)
- 1 – [ 15 oz. ] can chickpeas, drained and rinsed
- Handful of grated carrots (optional)
- ½ cup sliced pepperoncini (optional) (+/-) *
Dressing Ingredients:
- 1 cup hummus *
- ¼ cup lemon juice
- 2 Tablespoons water
- 1 Tablespoon + 1 teaspoon pure maple syrup
- ¼ teaspoon coriander
- ¼ teaspoon cumin
- ½ teaspoon sweet paprika
- ¼ teaspoon smoked paprika
- ¼ teaspoon cinnamon
- 1 teaspoon garlic powder
- ¼ to 1 teaspoon sea salt
Instructions
- Place all the Salad Base Ingredients into a large bowl, mix well, set aside.
- Add the Dressing Ingredients into a bowl, whisk well until smooth and emulsified.
- Taste test for flavor, add more ingredients to the dressing, if needed.
- Pour the dressing over the salad ingredients, mix well to completely coat the salad ingredients. Taste test and add more seasonings as needed.
- Serve and enjoy!
