Description

Easy to make and full of Middle Eastern spices, this Vegan Lebanese Shawarma Salad is a fun twist that’s sure to hit the spot for shawarma lovers everywhere.


Ingredients

Base Salad Ingredients:

  • 3 heads romaine hearts lettuce, chopped *
  • 3 mini cucumbers, diced
  • 1 ½ cups grape/cherry tomatoes, halved
  • 1/3 cup red onions, thinly sliced (or pickled red onions)
  • 1 – [ 15 oz. ] can chickpeas, drained and rinsed
  • Handful of grated carrots (optional)
  • ½ cup sliced pepperoncini (optional) (+/-) *

Dressing Ingredients:

  • 1 cup hummus *
  • ¼ cup lemon juice
  • 2 Tablespoons water
  • 1 Tablespoon + 1 teaspoon pure maple syrup
  • ¼ teaspoon coriander
  • ¼ teaspoon cumin
  • ½ teaspoon sweet paprika
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon cinnamon
  • 1 teaspoon garlic powder
  • ¼ to 1 teaspoon sea salt

Instructions

  1. Place all the Salad Base Ingredients into a large bowl, mix well, set aside.
  2. Add the Dressing Ingredients into a bowl, whisk well until smooth and emulsified.
  3. Taste test for flavor, add more ingredients to the dressing, if needed.
  4. Pour the dressing over the salad ingredients, mix well to completely coat the salad ingredients. Taste test and add more seasonings as needed.
  5. Serve and enjoy!
