Tips for Success:
- Flavor Profile: This creamy blueberry lemony dressing is pure deliciousness. If you enjoy a fruity vinaigrette style dressing with lemon overtones, then you will enjoy this dressing, can be made in less than 5 minutes. It tastes like summertime.
- Hummus: The hummus is used to create creaminess. You will not be able to taste “hummus” in this dressing. Avoid using a flavored hummus like roasted red pepper, olive, artichoke, beet, etc.
- Balsamic Vinegar: The balsamic vinegar is optional. It just adds a layer of dimension to the dressing. If you have it on hand, use it. If not, don’t go out of your way to purchase it.
- Thickness of the Dressing: This dressing is creamy and slightly thick. As with most hummus-based dressings, this dressing will thicken up over time or if placed in the refrigerator. To thin out, simply add a little water or distilled white vinegar.
- How to Toast Walnuts: Toasted walnuts provide super flavor over untoasted walnuts. Toasting really enhances the nutty flavor. To toast walnuts, simply placed the walnuts into a dry skillet and stir occasionally over medium heat for 3 to 7 minutes until nice, toasty, and fragrant. Immediately remove them from the skillet to prevent burning. Watch them carefully as they burn easily. The walnuts are optional.
- High-Speed Blender versus Food Processor: A high-speed blender is ideal, but you can still make this using a food processor with slightly less creamier results.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dressing can be frozen.

Ingredients
Dressing Ingredients:
- 1 cup blueberries
- 3 Tablespoons fresh lemon juice
- ½ to 1 teaspoon fresh lemon zest (+/-)
- ½ cup hummus
- 2 Tablespoons distilled white vinegar
- 1 Tablespoon + 1 teaspoon pure maple syrup (+/-)
- ¼ to ¾ teaspoon sea salt (+/-) *
- 1 teaspoon balsamic vinegar (optional) *
Salad Ingredient Ideas:
- Romaine lettuce
- Baby Spinach
- Toasted Walnuts
- Fresh blueberries
- Red onions
- Chickpeas
Instructions
- Place all the Dressing Ingredients into a high-speed blender, blend on high until smooth and emulsified.
- Pour dressing over salad fixings, toss, enjoy!
