This week’s Whip It Up Wednesday is our utterly delicious Warm Red Onion Dressing. In our prior life, we made a beautiful warm spinach-arugula salad with an awesome red wine vinaigrette dressing. It was one of Katie’s favorites. We wanted to convert this dressing to Whole Food Plant Based and make it fun, bold, and full of tangy flavors. We loved it!

Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less. The beauty of this recipe is that the raw almond slivers do not require presoaking. Just place them in the skillet with all the other ingredients and cook for a minute, then place in a high-speed blender until smooth and creamy.
Our Oil Free Warm Red Onion Red Wine Vinegar Dressing is the perfect served warm or cold.

Ingredients
- ½ medium red onion, thinly sliced
- 1 Tablespoon finely minced garlic
- ¼ cup + 3 Tablespoons red wine vinegar
- ¼ cup + 1 Tablespoon water
- 1 Tablespoon + 1 teaspoon organic maple syrup
- 2 Tablespoons raw almond slivers*
- ¼ teaspoon sea salt(+/- to taste) *
Instructions
- Sauté the thinly sliced red onions in a nonstick pan over medium-high heat until tender, about 5 minutes. Add splashes of water to help soften the red onions and prevent them from sticking.
- Next add the finely minced garlic to the pan and sauté for 30 seconds, then add all the remaining ingredients. Stir to combine and sauté for an additional minute, then remove from the heat to slightly cool.
- Then place into a high-speed blender and process for one minute until everything has been emulsified and is smooth and creamy.
- Serve immediately as a warm dressing over your favorite salad greens or veggies.
- Can be served hot or cold. If refrigerated, when ready to serve, remove from the refrigerator and whisk before serving. You may need to add a little water to thin it out.
Notes
*Almond slivers: No presoaking is required if using almond slivers.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes about 1 cup
*Storage: Refrigerate and use within 5days.

Can I replace the vinegar with lemon Juice?

We highly recommend using the red wine vinegar as it goes really well with the red onions and creates a nice tangy/sweet flavor. You could try the lemon, but we aren’t sure how the flavors will turn out. If you try it, please let us know how it went. Thank you so much!
