Not only is it healthy, fast, and easy, but it’s the perfect addition for salad lovers who want to switch up their dressing game. Sweet red onions, zesty red wine vinegar, rich almonds all come together for a deliciously creamy dressing that will hook you with the first bite, making it this week’s awesome Whip It Up Wednesday recipe.

Ingredients

  • ½ medium red onion, thinly sliced
  • 1 Tablespoon finely minced garlic
  • ¼ cup + 3 Tablespoons red wine vinegar
  • ¼ cup + 1 Tablespoon water
  • 1 Tablespoon + 1 teaspoon organic maple syrup
  • 2 Tablespoons raw almond slivers*
  • ¼ teaspoon sea salt(+/- to taste) *

Instructions

  1. Sauté the thinly sliced red onions in a nonstick pan over medium-high heat until tender, about 5 minutes. Add splashes of water to help soften the red onions and prevent them from sticking.
  2. Next add the finely minced garlic to the pan and sauté for 30 seconds, then add all the remaining ingredients. Stir to combine and sauté for an additional minute, then remove from the heat to slightly cool.
  3. Then place into a high-speed blender and process for one minute until everything has been emulsified and is smooth and creamy.
  4. Serve immediately as a warm dressing over your favorite salad greens or veggies.
  5. Can be served hot or cold. If refrigerated, when ready to serve, remove from the refrigerator and whisk before serving. You may need to add a little water to thin it out.

Notes

*Almond slivers:  No presoaking is required if using almond slivers.

*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

*Serving:  Makes about 1 cup

*Storage: Refrigerate and use within 5days.
