Tips for Success:
- Flavor Profile: This Oil Free Greek Topped Hummus is a beautiful and tasty appetizer. Perfect for your next holiday gathering or potluck. Full of olive tangy goodness this hummus dish pairs well with creamy hummus and small-diced veggies served with toasty pita bread triangles.
- Mixed Pitted Olives: Use a variety of canned or deli green Greek olives, black olives, and/or kalamata olives.
- Hummus: We used our The Best Hummus Feel free to use your favorite humus recipe or store bought (oil-free) hummus.
- Pita Chips: We made our Healthy Whole Grain Pita Bread. You can use your favorite pita bread or store-bought pita bread.
- Serving Ideas: You can mix and match whichever items listed under the serving ideas or simply do not use any of them and opt for veggie sticks to serve with the olive topped hummus.
- Baked Pita Chips: Lay the pita bread onto a flat surface and cut in half, then cut each half into thirds for a total of 6 triangles per each pita bread. Then open each triangle and split it in half and lay it onto a baking sheet. After opening all the pita triangles (overlapping is fine), then place into a preheated 350 F oven for 5 to 7 minutes to toast crisp. Watch them carefully to prevent burning. We used 4 – 6 inch pita breads for a total 24 triangles which we opened and split, for a grand total of 48 pita chips.
- Make-Ahead: You can create the entire platter, leaving out the pita chips and tomato halves, cover tightly and then refrigerate. Right before serving add the cherry tomato halves and pita chips and serve. While you can add the red onions to the platter and refrigerate, red onions typically have a strong flavor that scent builds over time in the fridge. The strong scent of red onions tends to permeate all the flavors. We suggest leaving them out if you plan to make ahead and refrigerate to serve later. Add right before serving or leave them out completely.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dish can be frozen.
Kitchen Equipment:
- Large serving platter
