This week’s Whip It Up Wednesday is our tasty Italian Sundried Tomato Dressing. I dream about salads.
I know I’ve said it before, but as a food blogger, especially a food blogger dedicated to the Whole Food Plant Based lifestyle, I know how important it is to come up with great salad dressings. We are all about our fresh veggies and salads after all.
Italian and Sundried Tomatoes
The words “Italian” and “Sundried Tomatoes” are a natural paired combination. They just go great together, right? We sure think so. They are a match made in sweet and savory heaven!
We fell in love with this salad dressing.
Italian Seasoning
The amount of Italian Seasoning used in this dressing really was a personal preference. Dad liked a lot of Italian Seasoning, Mom liked a medium range, and I liked the lower amount.
Almost sounds like a Goldilocks situation, right? I thought the full Tablespoon of Italian Seasoning was a bit much (especially after it sat a little and marinated,) but Dad was like “more, more, more” until we had a full tablespoon in the dressing.
He loved it, but on subsequent kitchen tests, I toned it down a bit and really enjoyed a lesser amount.
You’ll need to play a little with it as well, start on the lower end and keep taste testing until you find that perfect sweet spot that will just send this dressing into heavenly goodness – YUM!

Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less.
This recipe can be made in about 10 minutes which really helps speed things up in the kitchen – and made in less than one minute if you don’t count the “sundried tomato soaking.”
Veggie Bowl Fun
We love this dressing on salads and quick and easy veggie bowls. It really makes veggies pop and creates a fast and healthy lunch or dinner. Mix and Match your favorite veggies, add in a carb/ protein and you have a perfection in a bowl.
In the veggie bowl above, we used the following:
- Bed of mixed greens
- Thinly shredded carrots
- Fresh, raw zucchini zoodles
- Chopped tomatoes
- Sliced radishes
- Sliced cucumbers
- Quartered brined artichokes
- Sliced small peppers
- Sprinkle of hemp seeds
- Sprinkle of pumpkin seeds
- Kidney beans
- Gluten free pasta
- Tossed and topped with a nice drizzle of our Italian Sundried Tomato Dressing

Ingredients
- ½ cup red wine vinegar
- ½ cup + 1 Tablespoon water
- 1 Tablespoon white miso *
- 1 Tablespoon organic maple syrup
- 2 teaspoons tahini
- 6 sundried tomato halves (no oil) *
- 1 Tablespoon dried minced onion flakes
- 1 teaspoon garlic powder
- ¼ teaspoon sea salt (+/- to taste) *
Other Ingredients:
- 1 teaspoon to 1 Tablespoon Italian seasoning *
Instructions
- In a small bowl, cover the sundried tomatoes in boiling water, set aside to soak for 10 minutes.
- In the meantime, measure out all your remaining ingredients into a high-speed blender except for the Italian seasoning.
- After 10 minutes, drain the sundried tomatoes and discard the water, then add the soaked sundried tomatoes (with all the remaining ingredients, except the Italian Seasoning) to the high-speed blender. Process on high until the dressing is smooth and completely emulsified. Stir in the Italian seasoning a teaspoon at a time. Do not blend in blender. Blending the Italian Seasoning in a high-speed blender can sometimes create a bitter note. For this reason, we suggest hand-stirring in the Italian seasoning.
- Taste test the dressing and add more seasonings by hand, if needed.
Notes
*Miso: We used Miso Master Organic Mellow White Premium Lite Miso, Certified Gluten Free. Miso really lends itself to balancing flavors when you don’t use oil. You can also substitute with chickpea miso for a soy free version.
*Sundried Tomatoes: Be sure to select oil free sundried tomatoes. They are typically dried like dates. We used Mediterranean Organic Sundried Roman Tomatoes.
*Italian Seasoning: We offer a range because we had family members enjoying varying amounts of Italian Seasoning. We suggest starting on the lower end (1 teaspoon) and stirring in more via taste testing until you reach the desired amount. Keep in mind as dressing marinates, the Italian seasoning slowly intensifies.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes approximately 1 cup of dressing.
*Storage: Refrigerate and use within 5 days.

Mine was too thick. Think I had too many sun dried tomatoes. I used pre-cut tomatoes so I didn’t know how many were 6. Thinned it out with more water. ??♀️

Hi loved your hemp lemon dressing, so want to try this one also. Is the 1/2 cup + 1tbs water for the dressing, or does it mean that I have to soak the tomatoes in the 1/2 cup water en put the 1 tbs in the dressing? Thnx!

Thank you so much for reaching out to us. The water used to soak the tomatoes is discarded after the sun-dried tomatoes have soaked. The 1/2 cup + 1T of water actually is part of the dressing.

Hello there! Have you been able to determine the precise measurement for the sun dried tomatoes? Perhaps a weight in grams or ounces. I am in the same camp as the Andrea ….using julienned cut strips. I also happened to have smoke ones and oh my it is delicious. But I would still appreciate a weight for the tomatoes. Also I am in the camp with DAD…1 tablespoon of Italian…oh yummyk!

For everyone asking for clarification on the amount/weight of tomatoes used. I did. Google search and found the package for the tomatoes used in this recipe. According to the package a serving size is 2 halves which in about 7 grams. 6 halves used in this recipe would be 21 grams. I hope you have more success with your dressing when you make it again.
