Life is always better with Mexican food in it, right? I know we certainly think so. We LOVE it, both the Americanized and the authentic versions.
Southwestern dishes work well with Whole Food Plant Based dishes. It is one of the few types of cuisines where you don’t have to constantly search for an ingredient to balance the flavors, it just naturally does!
Mexican Rice Stir Fry
Maybe you have been making this type of dish all along, but we just recently stumbled across the idea. Seriously, we were trying to find a new way to use up some cooked brown rice that we had in the fridge and we were strongly leaning toward another Asian Fried Rice, when we said at the exact same time – let’s try it with a Southwestern flair! LOL
Spending Time Together
It’s true when you spend a lot of time with someone, you can start to think alike (obviously) and then you can actually finish each other’s sentences (like twins, I suppose), and then weird things start to happen like you both show up wearing the exact same clothing combinations. Weird, right?
Mom and I have this weird thing where we land on the same clothing combinations all. the. time. Seriously, all the time. We don’t even know that the other is wearing and we still land on it. Red shirt – black pants, blue shirt – blue pants, purple shirt – black pants, you get the idea.
You might be thinking well the odds are pretty high that this is going to happen, but not really when you think about it, but this happens almost every day. Just had to share that with you, cuz I always find it odd, and it kinda goes along with the story of landing on this Mexican dish.
ESP, or something . . .
Mom also has this super weird antenna where she can totally predict what is going to happen before it happens. Nothing super awesome, like lottery numbers or anything like that (oohhh how I wish), but she will bring up someone’s name or some weird occurrence and then bam that person completely out of the total blue, will call or contact us.
Or someone will call her to complain about someone and she is like “this is why they did that and this is what is going to happen next” and sure enough, it happens just as she predicted . . . every . . . single . . . time, even though the other person was like “Ohhh no, that is never going to happen, I can promise you!” She has great radar! LOL
What’s funny is that she typically doesn’t like to give advice, unlike my dad who is the King of Advice giving. My dad, whom I love with all my heart, has advice to give on everything, and I do mean everything.
Little Pearls of Wisdom
My dad has some sage advice for every single thing one does in life, from how to stack dishes in the cabinet, to appropriate dryer usage, to shoe shopping tips, to how to select the perfect fruit, to pen organization, to reviewing toothbrushes for new purchases, to monitoring oven usage, to how many napkins one should use during dinner . . . the list is endless, seriousssssly endlessss!
Mind you, he is perfectly harmless, but he feels that he has sage wisdom to share on every aspect of life, kinda like Phil from the TV show Modern Family with his book of Phil’sophy. Totally cracks me up!
Although I admit, I am worn out on hearing about his views on oven usage. LOL My brother got a little preview of that when he was home this past August when Dad whipped out the large industrial sized fan and held it over the open oven door for 20 minutes after we were done using it. LOL Mom just thinks that since he has retired and has no hobbies, his new hobby is sprinkling words of wisdom upon all of us! Please don’t get us wrong, we love him to pieces, but sometimes, you just gotta laugh and ya just gotta poke a little fun 😉

It’s true, since TP109 retired 9 years ago, he doesn’t have anything to focus on so he walks around the house offering advice to keep busy. Sometimes, he actually has some awesome advise; however, I would never tell him that. HAH! Don’t worry, he doesn’t read our blog too often, so chances are, he will never see this sentence! Unlike Michael (Ameera’s husband) who LOVES to read about himself. It’s really rather cute. Hi Mikey! See, I wrote about you! LOL
TP LOVES being our recipe tester. He holds court with his review, little pen and paper in hand, scribbling furiously as he savors each bite like a professional wine taster would do. Smelling, looking closely at it, taking a tiny bit at first, then savoring the flavor. Sometimes, I think he should fold up his review into a little tiny square for us to unfold like a gift! LOL

Description

Ingredients
- 1 ½ cups bell peppers, cubed (mix of yellow, red, or orange)
- 1 large jalapeno pepper (or 2 small), fine dice
- ½ medium red onion, small dice (about 1 cup)
- 1 Tablespoon minced garlic
- 3 cups cooked and refrigerated brown rice
- ¾ cup frozen corn, thawed
- 1 – [ 15 oz. can ] black beans, drained and rinsed
- 1 cup salsa *
Spice/Herb Ingredients:
- ½ teaspoon chili powder
- ¼ teaspoon chipotle powder
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon cumin
- ¼ teaspoon dried coriander
- ½ teaspoon smoked paprika
- ½ teaspoon sea salt (+/-) *
- 1/8 teaspoon black pepper
Optional toppings:
- Chopped green onions
- Chopped fresh cilantro
- Salsa
- Limes
- Hot Sauce
- Avocados
Instructions
- Combine all the Spice/Herb Ingredients in a small bowl, stir to incorporate. Set aside.
- In a large ceramic/enamel lined Dutch oven/pot or similarly large stockpot, add the diced onion, bell peppers, and jalapeno pepper. Sauté over medium heat for 5 to 7 minutes to soften them. Add a splash of water if they start to stick.
- Once the onions and peppers are softened, then turn down the heat a little, and add the minced garlic and sauté for 30 seconds.
- Then add the Spice/Herb Mix over top of the sautéed veggies, stir, and heat the spices to release their fragrance, about one minute. Stir the spices constantly.
- Next stir in the cooked brown rice, stir constantly for one minute.
- Then add the corn, black beans and salsa. Cook for a few minutes to heat through.
- Serve immediately and top with your favorite toppings.

*Salsa: Use your favorite salsa.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes 4 servings.
*Storage: Refrigerate, use within 5 days.

Thanks for dinner last night. This was good and had just the right amount of heat.
Had made brown rice the day before, thinking I’d make my fav (your pineapple fried rice). It is a rotation recipe, but then I saw this one. Looking forward to leftovers for lunch today!!
