This week’s Whip It Up Wednesday is our delicious Fast and Easy Tomato Soup.

Growing up we ate a lot of tomato soup coupled with tons of saltine crackers or with a grilled cheese sandwich. Mom would always buy “that” canned tomato soup, you know the one I am talking about with the red and white label, full of high fructose corn syrup and other hard to pronounce ingredients.
I readily admit, I loved that soup. I grew up on that soup like a lot of people. It wasn’t until I went Whole Food Plant Based that I realized how bad it is for you.
Like the Real Deal!
Believe it or not, this Fast and Easy Tomato Soup tastes pretty darn close to that canned tomato soup I grew up on, and it’s even better! The key to the deliciousness is using Pomi Strained Tomatoes. Pomi Strained Tomatoes has a very fresh taste, like you just picked tomatoes fresh from the garden.
They are unlike any other store-bought tomatoes I have ever had, so fragrant, fresh, and flavorful. Now how’s that for alliteration? LOL

Substitutes?
Pomi Strained Tomatoes are thick, pureed and briefly cooked and strained of all seeds and skins, so they are very unique and very fresh tasting. Regular tomato puree is cooked longer and can sometimes have a bitter and acidic note to it, which is especially noticeable without oil.
Most tomato products are naturally acidic, but the closest tomato product to Pomi is tomato puree and it happens to be exceptionally acidic in my humble opinion and not nearly as flavorful.
Quinoa Flatbread Companion
We coupled this delicious tomato soup with our quinoa flatbread; however, we added 2 Tablespoons of Nutritional Yeast and a teaspoon of garlic powder and about 1 teaspoon extra plant milk to accommodate the extra dry ingredients to the quinoa flatbread basic recipe.

Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less. This recipe can be made in about 13 minutes which really helps speed things up in the kitchen.
We topped this deliciousness with creamy plant yogurt (swirls), basil, micro greens, and hemp seeds. Perfect as a side dish or add brown rice and/or roasted veggies for an amazingly filling dinner!

Ingredients
- 1/8 cup raw cashews *
- 1 – [ 26.46 oz. carton ] Pomi Strained Tomatoes*
- ½ cup vegetable broth *
- ¾ cup water
- ½ cup unsweetened plain plant milk
- 1 Tablespoon white miso *
- 1 Tablespoon dried minced onions
- ½ teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon sea salt (+/-) *
- Pinch black pepper
Optional Toppings:
- Crushed red pepper flakes
- Chiffonade fresh basil
- Unsweetened plain plant yogurt
- Microgreens
Optional Add-ins:
- Sundried tomatoes, fine chop (not packed in oil)
- Steamed rice of choice
- Beans of choice
- Additional spices
- Greens such as spinach, kale, etc.
- Roasted red peppers (not packed in oil)
- Roasted veggies
Instructions
- In a small bowl, cover the raw cashews in boiling water, set aside to soak for 20 minutes (or do a quick boil by placing the cashews in a small pot, cover with water and boil for 10 minutes).
- In a medium sized pot, add all the ingredients (except the cashews and any add-ins or toppings) and cook for 5 minutes. Remove from the stove allow to cool slightly.
- Transfer the soup and cashews to a high-speed blender and blend until smooth, about one minute. Please be very careful. Cover the high-speed blender with a thick tea towel to prevent burns when unscrewing the lid as the steam from the hot soup builds and can squirt out when you unscrew the lid. Then transfer the soup back to the pot and add in any additional seasoning or add-ins that you wish.
- Serve with your favorite toppings.
Notes
*Pomi Strained Tomatoes: The Pomi Strained Tomatoes are an essential ingredient in this recipe as Pomi’s Strained Tomatoes has a unique, fresh flavor to them. They are absolutely delicious. You can substitute other strained tomato brands or types of tomatoes and puree them, but the flavor may not be as robust or fresh tasting. You can find Pomi Strained Tomatoes at most grocery stores. They come in a small red box and can be found near the tomato products like puree, sauce, and paste.
*Vegetable Stock: We use Pacific Organic Vegetable Stock. We love this brand because it is Whole Food Plant Based compliant, as it does not contain MSG, has no oil, and does not contain any highly-processed ingredients.
*Miso: We used Miso Master Organic Mellow White Premium Lite Miso, Certified Gluten Free. Miso really lends itself to balancing flavors when you don’t use oil. You can also substitute with chickpea miso for a soy free version.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: 2 to 3
*Storage: Refrigerate and use within 7 days.

I forgot that we were out of crushed tomatoes and so I used one can sauce and a huge garden tomato. The flavor was really good with a bit of richness and freshness with fresh chopped basil on top.
Delicious. I currently have a flu or something and this soup was perfect. I added an extra 1/2 cup of broth and didn’t do the cashews cuz I feel pretty bad, and I also microwaved it. (Horrible of me.) I can’t wait to make this properly when I’m better cuz I bet its off the charts!
