Tips for Success:
- Flavor Profile: This chickpea salad is easy to make using hummus as the dressing base filled with delicious tangy Caesar flavors. If you are not a fan of tangy flavors, then perhaps skip this recipe.
- Hummus: We used our The Best Hummus Feel free to use your favorite oil-free hummus, either store-purchased or homemade.
- Caper Brine: The caper brine is simply the liquid from the jar of capers.
- Mashing the Capers: Measure out 2 Tablespoons of capers (drained), place them on a flat surface, chop with a sharp knife, then mash them with a fork or the side of a knife, pressing and smearing them across the cutting board. Once thoroughly mashed, it should resemble a paste, scrape up the caper paste and add it to the dressing ingredients and mix well.
- Grated Carrots: You can grate the carrots using a box grater or food processor. You can also use store-bought matchstick carrots purchased from the grocery store; however, chop into smaller pieces. We used matchstick carrots.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dish can be frozen.
Pantry Products:
- Dijon Mustard: We used Koops Dijon Mustard. Feel free to use your favorite Dijon mustard.
- Capers: We used Jeff’s Garden Organic Imported NonPareil Capers. We have also tried many other brands of capers that worked equally well. Feel free to use your favorite brand of capers, just be sure to read the label. Jeff’s ingredients are: organic capers, water, organic distilled vinegar, sea salt.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Description

Ingredients
Base Ingredients:
- 1 – [ 15 oz. can ] chickpeas, drained and rinsed
- ¾ cup chopped celery (+/-)
- ½ cup sliced green onions (+/-)
- ¼ cup grated carrots
Dressing Ingredients:
- ½ cup hummus *
- 2 Tablespoons capers, mashed *
- 1 Tablespoon caper brine (+/-) *
- 1 Tablespoon lemon juice
- 1 teaspoon Dijon mustard (+/-) *
- 1 Tablespoon water
- ½ teaspoon pure maple syrup (+/-)
- 2 teaspoons nutritional yeast
- ½ teaspoon garlic powder
- Pinch to ¼ teaspoon sea salt (+/-) *
Serving Ideas:
- Pita
- Toast
- Wrap
- Lettuce cups
Instructions
- Roughly chop to the chickpeas with a knife (or place in a food processor and pulse a few times, just to break them up), then place in a large bowl.
- Place all the remaining Base Ingredients into the large bowl with the chopped chickpeas, set aside.
- Place all the Dressing Ingredients into a bowl, mix well until emulsified.
- Pour the dressing over top of the chickpea salad ingredients, mix well. Serve in your favorite pitas, on toast, in wraps, or as lettuce cups.
