This week’s Whip It Up Wednesday is our delicious, oil-free Bold Russian Dressing. As most of our Readers already know, Mom and I are working our way through converting as many dressings and sauces as we can to Whole Food Plant Based.
When we were making our Oil Free French Dressing, we knew that a few tweaks would easily convert it to a Russian dressing since they can be very similar depending on which version of both French and Russian you prefer.

Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less. This recipe can be made in about 5 minutes, which really helps speed things up in the kitchen.
Our Bold Russian Dressing is the perfect accompaniment for your veggie/salad bowls, or simply over some steamed veggies. It is a burst of delicious tang that is sure to put a smile on your face.

- Salad green
- Julienne red bell pepper
- Julienne carrots
- Chopped cucumber

Whole Food Plant Based Salad Dressings

- Prep Time: 5 Minutes

Tangy and creamy, this oil-free vegan Bold Russian Dressing is healthy, fast, and easy to make. It’s perfect for salad lovers everywhere! Whole Food Plant Based, vegan, plant based, oil free, refined sugar free, gluten free, no highly processed ingredients.
Ingredients
- ¼ cup organic maple syrup (+/-)
- ¼ cup water
- ¼ cup + 1 Tablespoon distilled white vinegar
- 2 teaspoons ume plum vinegar *
- 2 Tablespoons tomato paste
- 1 Tablespoon + 1 teaspoon almond butter *
- 1 ½ teaspoons horseradish * (+/-)
Spice/Herb Ingredients:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 Tablespoon dried minced onions
- ½ teaspoon sweet paprika
- ½ teaspoon dried ground mustard powder
- 1/8 teaspoon chili powder
- Pinch celery seeds (optional)
- ¼ teaspoon sea salt (+/-) *
Instructions
- Place all the ingredients into a high-speed blender (or with a whisk), blend until emulsified and smooth.
- Taste test the dressing and add more seasonings, if needed. Enjoy!
Notes
*Tips for Success: This is a tangy dressing. If you prefer less tang, cut back on the distilled white vinegar. Additionally, the horseradish gives it a punch of flavor which is delicious. If you prefer less punch and more sweetness, cut back on the horseradish and increase the maple syrup about ½ teaspoon at a time until you reach the desired levels of flavor.
*Almond Butter Substitutes: You can substitute the almond butter with other seed and nut butters with the understanding that the flavors will change accordingly.
* Ume Plum Vinegar: We highly recommend using Ume Plum Vinegar, however you can substitute with another vinegar. Keep in mind the flavor will slightly change according to the vinegar used. (Plus, we have a bunch of other recipes that use ume plum vinegar.)
*Horseradish: We used Gold’s Prepared Horseradish. It is WFPB compliant and gluten free. It is typically found near the mustards or jarred olives and peppers in most grocery stores. There isn’t a good substitution for the horseradish. You can leave it out, but it takes the pizzazz out of the dressing. UPDATE: We recently had a Reader substitute the horseradish with wasabi with excellent results.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes approximately 1 ¼ cups of dressing.
*Storage: Refrigerate and use within 7 days.

I made this salad dressing for lunch today. I did have to order the ume plum vinegar, but it was worth the wait. I’ve been enjoying the lettuces from our local farmer’s market and this dressing was the perfect accompaniment. I can’t wait to try some of your other salad dressing recipes!

I’m drying my lettuce (after cleaning)this afternoon and making this dressing.
