This week’s Whip It Up Wednesday is our delicious oil-free Apple Ginger Vinaigrette dressing. Mom and I are always experimenting with salad dressings for our veggie bowls and salads, and this dressing was a delightful surprise to both of us.
We all loved it, but the surprising part was the varying difference of opinions on flavor accents.
Dad preferred that the Dijon mustard was the accent flavor, while Mom loved more ginger with pops of vinegar tang (no surprise there – LOL), and I preferred to accent the maple syrup.
The great news is that this recipe is totally customizable so you can accent the flavors that you love most just like we did.
Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less.
This recipe can be whipped up in about 5 minutes, largely dependent on how fast you can peel and core an apple, and measure ingredients.
This quick an easy recipe really helps speed things up in the kitchen.

Veggie Bowl Fun
We love this absolutely LOVED it on this salad. Here’s how we put it together. In the salad bowl above, we used the following:
- Salad greens
- Shredded purple cabbage
- Chickpeas (sprinkled with some paprika for color)
- Shredded carrots
- Chopped cucumbers
- Sliced radishes
- Sliced apples
- Sprinkle with sesame seeds
- Topped with a nice drizzle of our oil-free Apple Ginger Vinaigrette dressing

This 5-minute oil-free Apple Ginger Vinaigrette dressing is the perfect drizzly addition to your salad with its delightful burst of sweet zingy goodness. Whole Food Plant Based, vegan, plant based, oil free, refined sugar free, no highly processed ingredients and gluten free.
Ingredients
Base Ingredients:
- 5 oz. to 7 oz. Gala apple, cored, peeled, chopped *
- 1 Tablespoon water
- 2 teaspoons distilled white vinegar (+/-) *
- 2 Tablespoons + 1 teaspoon rice vinegar
- 1 teaspoon organic maple syrup (+/-)
- 1 teaspoon Dijon mustard (+/-) *
- 2 teaspoons tahini
- ¼ teaspoon minced ginger (+/-) *
Spice/Herb Ingredients:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried minced onions
- ¼ teaspoon sea salt (+/-) *
Instructions
- Place all the Base Ingredients and Spice/Herb Ingredients into a high-speed blender, blend until emulsified and smooth.
- Taste test and add adjust seasonings/ingredients accordingly.Serve over your favorite salad greens.
Notes
*Gala Apple: You can use any medium-sized sweet apple you like. We used a 7 oz. Gala apple (weight is before peeling and coring).
*Dijon Mustard/Vinegar/Ginger/Maple Syrup: Our family loved this dressing; however, we each had preferences over the multiple kitchen tests. Some preferred more Dijon mustard, while others liked more ginger and pops of vinegar tang. Others preferred more sweetness. This recipe is a great base to start. It is perfectly delicious as is in the recipe but can be customized to suit individual preferences.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes approximately 2/3 cup of dressing.
*Storage: Refrigerate and use within 5 days.

Thank you for your question. You can substitute with cashew butter or almond butter. Try small amounts to gain a better understanding of the flavor before committing to the full amount.
