I love me some mashed potatoes! For me, potatoes are like one of my ultimate comfort foods, and in mashed potato form they are just heavenly. We typically always have a huge amount in the fridge.
We tend to meal prep mashed potatoes in large quantities simply because they are easy to make in bulk and come in handy when you are hovering near the edge of “starving” and need a quick fix of a little “something, something” to keep you from falling off the wagon.
Let me rephrase that, I don’t mean falling off the WFPB wagon to eat junk. When I say fall off the wagon, it’s me eating too much of Whole Food Plant Based deliciousness that I shouldn’t eat a ton of. For example, pulling out some WFPB cookies, WFPB baked goods, etc. from the freezer for a sweet treat or something along those lines (it’s packed full of kitchen tests – LOL !)
Don’t get me wrong, there is nothing wrong with a WFPB sweet treat here or there, but potatoes really help me curb those sweet or fatty foods cravings.
Scheduling
Mom and I have been holding this recipe since last December. We just kept moving it around and around and around on our virtual white board for scheduling.
Not that this deliciousness isn’t an amazing recipe, it’s just that sometimes things just get shuffled around over, and over again depending on what is going on, what is in season, what has been requested, etc.
For example, I just counted how many shot and fully developed recipes are scheduled – guess what? We have over 54 recipes already scheduled over the next four months. So much YUMMMINESS coming your way soon!

Vegan Buffalo Veggies
It wasn’t until we started testing our Vegan Buffalo Veggies that we knew we had a match made in heaven, so we decided to pair them together for a Wednesday/Friday post.
But, then we had to reshoot the mashed potatoes, so we could pair them together! Ughhh, I hate when that happens! Meaning, reshooting a completed dish simply because we changed how we wanted to food style it. 😛 It happens, LOL.

Ingredients
- 4 lbs. Russet potatoes, peeled
- ¼ cup + 2 Tablespoons unsweetened plain plant yogurt
- ½ to ¾ cup unsweetened plain plant milk
- 2 teaspoons apple cider vinegar
- 3 Tablespoons fresh chives, chopped
Herb/Spice Ingredients:
- 1 ½ teaspoons onion powder
- 2 teaspoons garlic powder
- ¾ teaspoon dried ground mustard powder
- ¼ teaspoon dried dill weed
- 1 teaspoon sea salt (+/- to taste) *
- ¼ teaspoon black pepper (+/-)
Instructions
- Peel and cut the potatoes into uniform pieces, rinse well to remove any excess starch. Place in cold water in a stock pot, bring to a high boil, then immediately lower to a low boil. Boil the potatoes until fork tender, drain and place the potatoes back on the stove (burner off) for about 30 seconds to remove some of the excess moisture from the potatoes.
- Mash the potatoes, then add all the ingredients (except the fresh chives) and mash until smooth and creamy. Then stir in the chopped chives, taste for flavor, and adjust spices/herbs to taste.

*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Can these be frozen? There is just the two of us so 4 pounds of potatoes is a lot!
