Tips for Success:
- Flavor Profile: This refreshing carrot salad is an oil-free Whole Food Plant Based nod to the Viral TikTok Carrot Salad. The many TikTok versions calls for sesame oil, which we have substituted with tahini. The flavor profile leans toward the Asian cuisine/influence.
- Fresh Carrots: This recipe is all about very thinly sliced fresh carrots. If you are not a fan of eating fresh carrots, then perhaps consider skipping this recipe.
- Amount of Carrots: The amount of carrots is really dependent upon the size of the carrots. The measurement of 10 oz. if after the carrots have been cleaned, peeled, and thinly stripped. We did not strip the entire carrot as the carrot peeler we used has a safety guard. Additionally, carrots have an inner core called the xylem or the heart of the carrot. It is usually lighter in color. See below on how we peeled the carrots into strips.
- Peeling the Carrots into Strips: We found the best way to peel the carrots into long thin strips was to clean and peel the carrots, then lay the carrot down onto a cutting board, then run the vegetable peeler firmly along the surface with slight pressure. This makes for just a slightly thicker strip of carrot. Make several passes with the vegetable peeler, then rotate the carrot and make several passes with the vegetable peeler on the next side. Continue until you have made several passes on each side. Then flip the carrot over to hold the other end of the carrot. In other words, switch up the end of the carrot you are holding in your hand to get a solid grip on the end of the carrot and repeat. Be careful, vegetable peelers are very sharp. Slicing carrots this way left the xylem (heart of the carrot) which we later cut up and ate as snacks for a different day.
- Key to the Perfect Carrot Thickness: Peeling the carrots into very thin strips makes for a perfect salad. However, as we mentioned in the section above, laying the carrots onto a cutting board, applying slight pressure makes for the perfect carrot strip thickness. If you hold the carrot in your hand while peeling into strips, you will end up with very thin flimsy, ultra-thin strips of carrots which is not the look we are going for. You want thin strips that are flimsy, but they still have some substance and character to them.
- Carrots Sitting in the Sauce: Once the carrot salad is dressed, the carrot strips will start to become flimsier. If you are going for the ultimate carrot salad appearance, serve immediately after dressing, also reference the Make Ahead section below.
- How to Toast Sesame Seeds: Place the sesame seeds into a dry skillet. Stir over medium heat until lightly golden brown. Immediately remove the toasted sesame seeds from the skillet to prevent burning. You can easily purchase toasted sesame seeds from the store. If you can’t locate toasted sesame seeds at your local store, then buy them raw and toast them yourselves. They add a beautiful nuttiness to the salad.
- Lime Juice versus Lemon Juice: Use your favorite citrus juice; lemon or lime. Our family was divided over which one they preferred.
- Amount of Pure Maple Syrup: Our family was divided over the amount of maple syrup that was needed to create the perfect amount of sweetness. You may find that you do not need any at all if your carrots are naturally sweet.
- Green Onions: The original TikTok version does not call for green onions, but we really enjoyed them. You can leave them out if you wish or substitute with a couple tablespoons of chopped chives.
- Serving after Refrigerating: This recipe is best when served immediately after making. If serving after refrigeration, remove from the refrigerator at least 30 minutes before serving to allow the flavors to wake up and allowing the tahini to thin out again. Tahini tends to thicken during refrigeration.
- Make Ahead: If making ahead for serving for a potluck, picnic, or family gatherings and to obtain optimum serving beauty and freshness, do the following:
- Day Before or Earlier in the Day:
- Clean the carrots and pat dry. Then slice the carrots the day before or earlier in the day. Place in an air-tight bowl and refrigerate.
- Slice the green onions and place in a small glass air-tight bowl and refrigerate.
- Toast the sesame seeds (if needing to toast) and place in a small air-tight bowl or plastic bag, set aside at room temperature.
- Make the dressing and place in a small glass air-tight covered bowl and refrigerate.
- 30 minutes Before Serving:
- Remove the dressing from the refrigerator approximately 30 minutes before dressing the salad.
- Before dressing the salad, test the thickness of the dressing. Whisk the dressing vigorously. It should be runny and thin. If not, add a teaspoon of warm water (or rice vinegar), whisk well until smooth and emulsified.
- Right Before Serving:
- Add the carrot strips, green onions, and toasted sesame seeds to a large bowl, mix well to evenly distribute.
- Add the dressing to the carrot mixture. Gently turn the carrot strips over and over until all are evenly coated with the dressing. Sprinkle a few extra sesame seeds on top and serve immediately.
- Day Before or Earlier in the Day:
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dish cannot be frozen.

Ingredients
Base Ingredients:
- 10 oz. peeled, thinly stripped carrots *
- 2 Tablespoons toasted sesame seeds *
- 3 to 6 green onions, thinly sliced (optional) *
Dressing Ingredients:
- 2 teaspoons rice vinegar (+/-)
- 1 Tablespoon tahini
- 2 to 3 teaspoons lime juice (or lemon juice) (+/-)
- 2 to 3 teaspoons water
- ½ to 1 teaspoon pure maple syrup (+/-) *
- Pinch to ½ teaspoon sea salt (+/-) *
- Pinch to ¼ teaspoon black pepper (+/-)
- ¼ teaspoon garlic powder (optional) *
Instructions
- Clean, peel, and thinly slice the carrots into long, very thin strips using a vegetable peeler and place into a bowl. Add the toasted sesame seeds and sliced green onions into the bowl along with the carrots. Mix thoroughly, set aside.
- Place all the Dressing Ingredients into a small bowl, mix well until smooth and emulsified.
- Pour the dressing over the carrot mixture, toss well to thoroughly coat all the ingredients. Serve and enjoy! Refrigerate leftovers.
