Description

Indulge in the vibrant flavors of this oil free carrot salad, a delightful twist on the trending TikTok Carrot Salad sensation.


Ingredients

Scale

Base Ingredients:

  • 10 oz. peeled, thinly stripped carrots *
  • 2 Tablespoons toasted sesame seeds *
  • 3 to 6 green onions, thinly sliced (optional) *

Dressing Ingredients:

  • 2 teaspoons rice vinegar (+/-)
  • 1 Tablespoon tahini
  • 2 to 3 teaspoons lime juice (or lemon juice) (+/-)
  • 2 to 3 teaspoons water
  • ½ to 1 teaspoon pure maple syrup (+/-) *
  • Pinch to ½ teaspoon sea salt (+/-) *
  • Pinch to ¼ teaspoon black pepper (+/-)
  • ¼ teaspoon garlic powder (optional) *


Instructions

  1. Clean, peel, and thinly slice the carrots into long, very thin strips using a vegetable peeler and place into a bowl. Add the toasted sesame seeds and sliced green onions into the bowl along with the carrots. Mix thoroughly, set aside.
  2. Place all the Dressing Ingredients into a small bowl, mix well until smooth and emulsified.
  3. Pour the dressing over the carrot mixture, toss well to thoroughly coat all the ingredients. Serve and enjoy! Refrigerate leftovers.
