Tips for Success:
- Flavor Profile: This simple and delicious Tarragon Dijon Green Bean Salad is beautifully balanced and seasoned. Dijon mustard is the prominent flavor in the salad dressing tossed with tender-crisp green beans and slivered shallots.
- Blanching the Green Beans: Start the count for blanching the green beans as soon as they are added to the boiling water, not when the water starts to boil again.
- Timing of Blanching: We enjoyed the blanched green beans best at the 5-minute mark. This may be too long or too short for some. Use a timing that best suits your personal tastes.
- Tender-Crispy Green Beans: If you are not a fan of tender-crisp green beans, then perhaps consider skipping this recipe.
- Dried Tarragon: Feel free to substitute dried tarragon with fresh tarragon, about 1 to 2 teaspoons freshly minced fresh tarragon.
- Fresh Green Beans: This recipe works best with fresh green beans. We have not tested the recipe with canned or frozen.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt, but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 4 days in the refrigerator. Store in a covered container.
This dish cannot be frozen.

Description
This vibrant Tarragon Dijon Green Bean Salad features a tangy Dijon dressing that beautifully complements the tender-crisp green beans.
Ingredients
Blanch Ingredients:
- 24 oz. fresh green beans, trimmed
- 1 teaspoon sea salt (+/-)
- 5 cups water
Skillet Ingredients:
- 1 small shallot, sliced thin
Dressing Ingredients:
- 1 Tablespoon tahini
- 1 teaspoon Dijon mustard (+/-) *
- 1 Tablespoon capers, minced
- 1 Tablespoon white wine vinegar
- 1 Tablespoon lemon juice
- 1 Tablespoon pure maple syrup (+/-)
- ½ teaspoon dried tarragon *
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- pinch to ½ teaspoon sea salt (+/-) *
- 1/8 teaspoon black pepper (+/-)
Instructions
- In a large, deep skillet, add 5 cups of water, 1 teaspoon of sea salt and bring to a rolling boil, then add the green beans and blanch (boil) for 5 minutes. Start the timer as soon as you place the green beans in the water.
- After 5 minutes, drain the green beans into a colander and run cold water over them until they are cold, (or plunge them into ice water), then lay them out onto a lint-free dish towel (or paper towels) to thoroughly drain.
- Make the dressing by adding all the Dressing Ingredients into a bowl and whisking well until smooth and emulsified.
- In a large bowl, gently mix the blanched green beans and shallots while pouring the dressing over top. Continue to gently mix until everything has been thoroughly coated.
- Transfer the green bean salad to a serving platter, serve, and enjoy.
