This week’s Whip It Up Wednesday is our super tasty Sweet and Tangy Vinegar Coleslaw. Dad loves, I mean LOVES vinegar-based coleslaws. There is a family-owned restaurant in a town just north of us that is known for their fried chicken and vinegar coleslaw. My dad and his buddies go there occasionally to discuss football and his beloved New York Giants. He would always come home and rave about their super tasty coleslaw. Neither Mom, nor I have ever eaten there. But we were super curious about this “amazing” coleslaw since Mom and I have always made creamy based coleslaws, which he loves too by-the-way.
Whip it up Wednesday
So, Mom and I embarked on making a vinegar-based coleslaw that would rival this infamous coleslaw that he loves so much . . . and we are so happy we did, because it is AWESOME and so gosh-darn EASY! And as you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less, so this coleslaw, which can be made in about 5 minutes, is perfect for a Whip It Up Wednesday recipe!

Ultimate BBQ Lentil Sloppy Joes
We decided that while this coleslaw makes for the perfect side salad, we thought it would also be awesome on a BBQ Sloppy Joe, and Oooo doggies (Charlotte reference), it is! Our BBQ Lentil Sloppy Joe is with these tasty slaw is a killer combination!

Ingredients
- 1 – 16 oz. package coleslaw mix (shredded green cabbage, carrots)
- 1 handful red cabbage, shredded (optional)
- ½ medium red onion, thinly sliced
Dressing Ingredients:
- ½ cup apple cider vinegar
- 2 Tablespoons water
- 2 teaspoons tahini
- 1 Tablespoon miso*
- 2 to 3 Tablespoons organic maple syrup (+/- to taste)
- ½ teaspoon ground mustard
- ¼ teaspoon celery seed (optional) *(See Notes)
- ¼ teaspoon sea salt(+/-) *
- 1/8 teaspoon black pepper (+/-)
Serving Ideas:
- Side Salad
- Topped on our Vegan BBQ Lentil Sloppy Joes
Instructions
- Place all the dressing ingredients in a small bowl, whisk to combine. Set aside.
- Place the coleslaw mix, red cabbage, and red onion slices in a bowl, toss to mix.
- Drizzle the dressing over the coleslaw mix, red cabbage, red onions and toss to combine.
- Taste the coleslaw, add more seasoning if desired.
- Serve as a delicious side salad, in a sandwich or wrap.
Notes
*Celery Seed: The celery seed is optional. If you have never tried it before, we suggest you try adding a tiny bit in a small bowl before adding it to the entire slaw. It has a strong distinct flavor. Most likely you will either love it or hate it. ?
*Miso: We used Miso Master Organic Mellow White Premium Lite Miso, Certified Gluten Free. Miso really lends itself to balancing flavors when you don’t use oil. You can also substitute with chickpea miso for a soy free version.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Makes: 4 to 5 servings
*Storage: Refrigerate, use within 5 days.
