Trust us, though—you really have to give this salad a try! It’s the perfect addition to brighten up any winter meal, and its burst of flavor will have you coming back for seconds.
Tips for Success:
- Flavor Profile: This Oil-Free Winter Orange Salad is both refreshing and beautiful. Salad greens are coated with a delicious orange vinaigrette that features pomegranate arils, toasty almonds, and segmented oranges. This salad is light, refreshing, and especially made for orange lovers.
- Orange Flavor: This salad is all about orange flavors.
- Pure Maple Syrup: The amount needed is directly proportionate to the sweetness of the navel oranges. In other words, the sweeter the oranges, the less maple syrup will be required.
- Toasted Almond Slices: Place the sliced almonds (or slivered almonds) into a dry skillet, toast over medium heat, stirring and flipping them over constantly until they turn golden. When golden, immediately remove from the skillet to avoid burning.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator (undressed). Store in a covered container.
This salad cannot frozen.

Ingredients
Salad Ingredients:
- 3 mini cucumbers (2 ½ to 3 cups), fine dice
- 4 to 7 green onions (½ to ¾ cup), sliced thin
- 2 heads romaine (12 oz. or 7 cups), chopped
Orange Vinaigrette Ingredients:
- 1/3 cup freshly squeezed orange juice
- Zest of 1 navel orange (approx. 1 Tablespoon)
- 2 teaspoons pure maple syrup (+/-) *
- 2 Tablespoons red wine vinegar
- 1 Tablespoons + 1 teaspoon tahini
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- Pinch to ¾ teaspoon sea salt (+/-) *
Optional Ingredients:
- ½ cup pomegranate arils (+/-)
- 1 cup segmented oranges (+/-)
- 1/3 cup toasted almond slices (+/-)
Instructions
- Place all the Orange Vinaigrette Ingredients into a small bowl, whisk well until smooth and emulsified, set aside.
- Place all the Salad Ingredients into a large bowl, mix well to combine, then pour the Orange Vinaigrette over top, mix really well until all the Salad Ingredients are thoroughly coated.
- Plate the salad onto a serving platter, then tuck in the segmented oranges and sprinkle with pomegranate arils and toasted almond slices. Serve and enjoy!
