This week’s Whip It Up Wednesday is our Southwestern Dressing. We have coupled this amazing dressing with a number of our recipes and received rave reviews on it that we felt it deserved its own post.
Yes, guys, it is THAT good. This dressing is scrumptious as a salad dressing, paired as a dipping sauce, or just splashed on a bowl of yummy Southwestern goodness, your taste buds will be delighted. You just gotta try it.

When Chris, Katie and Charlotte visited a few weeks ago, we served this dressing to them with several Southwestern dishes and they totally loved it. The texture is perfectly creamy and the flavor is a delightful *POW* of yumminess.
Mom loves to dip our Cornmeal Crusted Oven Baked Potatoes in this dressing. Dad loves this dressing on our super tasty Fiesta Burgers. I love this dressing on salads, especially our Southwestern Salad, and stay tuned for Friday’s post on Taquitos! You won’t want to miss it!

Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less. This recipe can be made in about 20 minutes which really helps speed things up in the kitchen. If you soak your cashews overnight, then you can make it in about one minute.

Description

Dreamy, smokey No Oil Southwestern Dressing packs a punch of deliciousness that is sure to put a smile on your face. Ingredients
- ½ cup raw cashews
- 2 Tablespoons tahini
- ½ teaspoon organic maple syrup
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 2 teaspoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt (+/-) *
- ¾ cup water
Instructions
- Quick soak the cashews by placing the cashews in a bowl, then add boiling water just to cover them. Soak for 20 minutes, then discard the water.
- Place the soaked cashews and all the remaining ingredients in a high-speed blender. Blend on high for one minute until very smooth and creamy.
- Taste test the dressing, adjust the flavors as needed.
- Adjust the consistency by adding more water if needed.
Notes
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes approx. 1 cup of Southwestern dressing
*Storage: Refrigerate. Use within one week.
Storage: Refrigerate and use within 5 days.

If I use cashew halves instead of whole, do I need to change the amount used?

Thank you so much for reaching out to us. When we use our bag of whole cashews some of them are already split in half. So you don’t have to get overly concerned about the measurement. If you have a little more, then you may need to add a little splash of water to get a thinner consistency. If you wish, you can always scale back the cashews just a tiny bit.

I can’t seem to get my cashews smooth- it’s grainy no matter how long I process in the blender or food processor. Amy hints? I’ve been running out through a strainer before adding other ingredients with blended cashews.

We are so sorry that this is happening. Are you using a high-speed blender like a Vitamix or Blendtec. A regular blender or food processor will not work. I hope this helps.

Made this today and the cilantro sauce. Didn’t have cashews on hand and subbed in silken tofu (half a package for each sauce). Worked out great! Also added a little bit less water since the tofu was already pretty watery. So yummy. Can’t wait to add them to the potatoes and taquitos.

This is my third time making this, and it’s already one of our favorites. I subbed white beans for the cashews to lower the fat, and it worked beautifully. I just had to use a little less water. Thank you for this wonderful recipe. Were enjoying it tonight with the roasted vegetable salad.
