If you’re a fan of the classic pecan pie, then you simply must try these little treats that are sheer perfection! With a delightful blend of flavors and textures reminiscent of your favorite dessert, these tasty morsels are bound to steal the spotlight.

Tips for Success:
- Flavor Profile: These Pecan Pie Caramels are easy to make and absolutely delicious. They are healthy, chewy and full of caramel yumminess. They are the perfect snack when you need a quick pick-me-up to power through until your next meal. Perfect for pecan pie lovers everywhere!
- Medjool Dates: We suggest using Medjool dates due to their consistent sticky and soft texture. If using a drier date, consider placing them in a small bowl, cover with boiling water for 10 minutes, then drain off the water and use. Make sure you drain thoroughly to remove any excess water.
- Pecans in the Food Processor: Process the dates alone in the food processor first, then add the other ingredients listed. If you accidentally process the pecans too finely or too long in the food processor, all the natural oils will come out, which is what you do not want to happen. Watch the food processor carefully. You want the pecans chopped into a meal, but do not take it too far. The mixture will become a large sticky ball after you add the maple syrup. Immediately stop when that happens or simply stop and frequently check the consistency of the mixture by pinching to see if it holds its shape and appears smooth. - Pecans: We used 8 oz. of pecans in this recipe. One cup of pecans that are finely chopped in the food processor and one cup of roughly chopped pecans.
- Hand Mixed In Chopped Pecans: Give the pecans a good chop, not too big and not too small. You want to bite into a nutty pecan crunch. Reference the blog post photos for reference.
- Why Almond Flour: The almond flour will remind you of a pie. It also works really well when combined with the minced pecans.
- Almond Flour Substitutes: We do not have suggestions for the almond flour as this recipe was developed to use it.
- Amount of Sea Salt: If you plan to top with some flakey sea salt, then do not add the extra sea salt (“plus a pinch of sea salt”) listed in the ingredients to the food processor. If you do not plan to use the flakey sea salt topper, then add the extra pinch of sea salt listed in the ingredients along with the ¼ teaspoon of sea salt listed. The wonderful thing about this recipe is that you can literally taste the end product and adjust accordingly.
- Peanut Butter: You will not taste the peanut butter as “peanut butter”. Rather it will add a lovely layer of dimension to the caramels.
- Peanut Butter Substitutes: You can potentially substitute with cashew butter, almond butter, other nut or seed butters with the understanding that the flavor and texture will change accordingly. You may need to adjust/add ingredients to compensate. We have not tested any substitutions.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt. The good news is you can taste test the mixture to know exactly how much salt is needed to suit your own tastes.
Leftovers and Freezing:
Leftovers will generally keep 8 days in the refrigerator. Store in a covered container.
These caramels can be frozen.

Description

Ingredients
Food Processor Ingredients:
- 8 Medjool dates, pitted (approx. 2/3 cup, packed) *
- 1 cup pecans
- 1 teaspoon natural peanut butter
- 2 Tablespoons almond flour
- ¼ teaspoon plus a pinch sea salt (+/-) *
- 2 Tablespoons pure maple syrup *
Mix In Ingredients:
- 1 cup chopped pecans
Optional Topping:
- Tiny sprinkle flakey sea salt
Instructions
- Place Medjool dates into the food processor, process for 30 to 60 seconds, until the Medjool dates break up and then resembles a sticky, thick mixture.
- Then place the cup of pecans, peanut butter, almond flour, and sea salt into the food processor and process just until the pecans are finely broken up, about 20 seconds.
- Next add the maple syrup and process until it forms a thick sticky ball. Do not overprocess. See notes.
- Move the mixture to a large bowl, then add the chopped pecan and mix them in, you may need to use your hands to evenly distribute.
- Using a small cookie scoop (or heaping tablespoon) and roll the mixture into one-inch balls, place into an air-tight storage container and refrigerate for 2 hours. Enjoy! Keep stored in the refrigerator.
