Description

Indulge your sweet tooth guilt-free with these irresistible Healthy Vegan Pecan Pie Caramels; they’re bursting with rich, chewy caramel goodness.

Food Processor Ingredients:

  • 8 Medjool dates, pitted (approx. 2/3 cup, packed) *
  • 1 cup pecans
  • 1 teaspoon natural peanut butter
  • 2 Tablespoons almond flour
  • ¼ teaspoon plus a pinch sea salt (+/-) *
  • 2 Tablespoons pure maple syrup *

Mix In Ingredients:

  • 1 cup chopped pecans

Optional Topping:

  • Tiny sprinkle flakey sea salt

Instructions

  1. Place Medjool dates into the food processor, process for 30 to 60 seconds, until the Medjool dates break up and then resembles a sticky, thick mixture.
  2. Then place the cup of pecans, peanut butter, almond flour, and sea salt into the food processor and process just until the pecans are finely broken up, about 20 seconds.
  3. Next add the maple syrup and process until it forms a thick sticky ball. Do not overprocess. See notes.
  4. Move the mixture to a large bowl, then add the chopped pecan and mix them in, you may need to use your hands to evenly distribute.
  5. Using a small cookie scoop (or heaping tablespoon) and roll the mixture into one-inch balls, place into an air-tight storage container and refrigerate for 2 hours. Enjoy! Keep stored in the refrigerator.
