Who remembers their mom making gallons of “weight loss” soup? My mom always made this soup whenever she started a diet. It is the classic, oldie, but goodie, detox weight loss soup.
I believe that the Cabbage Diet Soup originates back to around 1950, but it may date back even further than that. There are tons of different versions out there on the innerwebs, but one component of the soup that was rarely changed was that it had a tomato juice/broth base and it was typically filled with a lot of cabbage and tons of other veggies.
Mom’s on a diet!
Without a doubt, every time I saw my mom preparing a huge vat of soup filled with cabbage, I knew she was starting a diet. The cabbage soup was very tasty so my poor mom had to tolerate 4 other people jumping in and eating her diet soup once she made it. No wonder she made it in huge quantities.
Following her lead!
This Detox Soup recipe aka Cabbage Diet Soup makes a ton of soup as well. It makes 1.5 gallons it! The good news is that it freezes well. I like to make it in large quantities and freeze half of it for those days when I am too tired to cook. Lately, mine never makes it to the freezer; it is gone within 2 days.
TP109 loves this soup! He is always begging me to make it for him. He calls it “Minestrone” simply because it reminds him of old-fashioned Minestrone soup.
I really load it up with tons of veggies. I call it the “Kitchen Sink” soup since I literally throw everything in it but the kitchen sink.
Detox Soup
We recently started calling it a Detox Soup simply because everyone I know calls it that. Same basic components, except ours is Whole Food Plant Based, no oil, no sugar, no highly processed ingredients. Pure deliciousness and oh so good for you.

It’s true, Dad is always bugging Mom to make “Minestrone” soup (Detox soup). He typically starts requesting it at the first official frost, and won’t stop talking about it until we make it.
He can eat bowl, after bowl, after bowl, it’s like he is somehow trying to eat massive quantities of it like a chipmunk saving nuts for the winter.
He scarfs it down with huge hunks of Italian bread. Dad is about 90% Whole Food Plant Based, but he will still eat his favorites like Italian bread.
Even if Mom isn’t ready to make this soup for Dad, he’ll start buying heads of cabbage just to get her to make it. LOL
I love this soup, but Dad, he is on a whole “nuther” level when it comes to his love of Detox Soup. AND, yes, it does make a ton of soup, but you won’t have to cook for several days, making it totally worth it!
It is literally packed with every vegetable and bean you can think of, making this soup a delicious bowl of wondrousness!

Description
A nod to the folkloric cabbage soup legend, it is truly delicious. A fabulous Whole Food Plant Based recipe. Oil free, sugar free, no highly processed ingredients, and gluten free!
Ingredients
- 1 – [ 46 oz. can ] tomato juice
- 10 cups water (or broth)
- 1 cup Pacific organic vegetable broth*
- 2 cups peas, frozen
- 2 cups corn, frozen
- 2 cups baby lima beans, frozen or canned (if canned, drain and rinse)
- 1 – [ 15.5 oz. can ] cannellini beans, drained and rinsed
- 1 – [ 15.5 oz. can ] kidney beans, drained and rinsed
- 2 – [ 14.5 oz. cans ] green beans, drained
- 1 – [ 15.5 oz. can ] pinto beans, drained and rinsed
- 1 cup pearl white onions, frozen
- 3 large celery stalks, chopped
- 3 large carrot, chopped
- 1 cup uncooked lentils
- 20 baby potatoes, quartered
- 8 cups green cabbage, shredded (one small green cabbage)
- 2 teaspoon sea salt (+/- to taste)
- ¼ teaspoon black pepper (+/- to taste)
- 2 Tablespoons dried minced onion flakes
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon cumin
- 1 bay leaf
Instructions
- Place all the ingredients into a very large stock pot (at least a 10-quart stock pot) except the baby potatoes. Bring to a boil then lower the heat to medium-low and cook for 20 minutes.
- After 20 minutes, add the quartered baby potatoes and cook over medium-low heat for an hour.
- Occasionally stir and check the tenderness of the baby potatoes and lentils. Once all the vegetables, baby potatoes and lentils are tender, taste the broth flavor, add more spices as needed, discard the bay leaf before serving.
- Yields 1.5 gallons of detox soup.
Notes
*Simmer: Simmer on low. Be carful not cook the soup at a high temperature or the beans may burst and disintegrate.
*Storage: Cool to warm, store in plastic or glass containers and refrigerate. Freezes well. If freezing, place in plastic containers, allowing head space, and freeze up to 6 months.
*Vegetable Broth: We used Pacific Organic Vegetable Broth because it does not have MSG, and has no highly processed ingredients; however, Pacific has a very strong flavor so our water to broth ratio is heavy on the water and low on the vegetable broth. If you are using a vegetable broth other than Pacific, please adjust the water to broth ratio accordingly.
Storage: Cool to warm, place in glass/plastic storage and refrigerate. Freezes well.
