This week’s Whip It Up Wednesday is our delicious Avocado Spinach Mushroom Toast (or English muffin)! Don’t underestimate the delicious of this dish – it’s sure to be a new favorite.
Wholesome (GF) toast or English muffin slathered with creamy, mashed avocado and piled-high with nutrient-packed spinach, hearty mushrooms, zesty red onions, and savory seasonings that is sure to please even the pickiest of eaters.
It’s so simple, yet over the top amazing; we ate them up like nobody’s business!

Avocado Toast (GF Muffins)
You might be thinking . . . “Avocado toast, really, is a recipe even necessary? Everyone eats avocado toast!”
Well, that’s what we thought too, until we had a few Readers ask us about how to go about making a yummy avocado toast because they felt there was no “magic” in their attempts to make avocado toast and didn’t see what the big deal was all about!
Well, we needed to change that asap – so, based upon that request, Mom and I got busy and whipped up this super easy and flavorful avocado toast for those readers who want some simple steps to creating avocado toast heaven!
Gluten Free WFPB Bread
As most of you gluten free WFPBers know, it is SO hard to find bread that is both WFPB and GF. We have not found a store bought bread yet, but we haven’t stopped our mission.
Additionally, we’ve been working on a Gluten Free WFPB bread for quite some time now, but just haven’t found that perfect combination. Fingers-crossed, hopefully soon!
Soooo, to clarify, we named this recipe using the words “toast” so that it is easy to search, but we are actually eating this tastiness on Food For Life Gluten Free Brown Rice English Muffins, which are 100% WFPB and gluten free – YAAAYY!!!!
The toast photos that you are seeing is for my dad using Dave’s Killer Bread (before the sad corporate takeover, which changed their bread recipe to now use oil.) If you do not need to be Gluten Free and still looking for a WFPB bread, we highly recommend Food For Life’s Bread options. They have a great variety of WFPB bread, buns, hotdog buns, wheat wraps, etc.

As you know Mom and I create a 20-minute meal every Wednesday for your Whip It Up Wednesday recipe.
This week’s recipe is a recipe that we take for granted. We make avocado gluten free English muffins (toast) all the time. It’s kind of second nature to us, like making a peanut butter and jelly sandwich.
So, when we had Readers ask us to create an avocado toast recipe, we said, “Sure, we’d be happy to create a recipe!”

Ingredients
- 4 oz. sliced mushrooms (of choice)
- 2 teaspoons low-sodium tamari * (+/-)
- ¼ medium red onion, cut into thin slices
- 3 handfuls baby spinach
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder
- Sprinkle sea salt (+/-) *
- Sprinkle black pepper (+/-)
- 2 Tablespoon water (or vegetable broth)
Other Ingredients:
- 1 avocado, mashed
- Sprinkle hemp seeds
- Gluten Free Toasts (GF English Muffins, quinoa flatbreads, base of choice)
Instructions
- In an enamel/ceramic lined skillet or similar non-stick skillet, add the sliced mushrooms and 2 teaspoons tamari, sauté for 4 to 5 minutes over medium-high heat to allow the mushrooms to release their liquid. Add a splash of water if needed.
- Push the mushrooms to the side of the skillet, then add the sliced red onions, baby spinach, garlic powder, onion powder, sea salt, black pepper and 2 Tablespoons of water. Sauté for a few minutes until the spinach is wilted and the red onions start to soften. When the onions reach the desired tenderness, remove from the stove, set aside.
- Mash the avocado. Toast the bread (or English Muffin), then place a layer of mashed avocado onto the toast, top with the mushroom/red onion/baby spinach mixture and sprinkle with a tiny bit of hemp seeds.
- Enjoy!
Notes
*Tip: We like the taste of avocado and found that the delicious mushroom, spinach, onion topping was perfect without adding any additional seasoning to the mashed avocado. However, if you are not a huge avocado fan yet, you can add a sprinkle of garlic powder, onion powder, salt, and pepper into the mashed avocado.
*Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos.
*Mushrooms: You can use your favorite mushroom. We used button mushrooms.
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes 2-3 avocado toasts.
*Storage: Refrigerate, use within the day.

If you do not need to be gluten free, Food For Life has great Whole Food Plant Based Oil Free bread options. Also, if you can find the oil free version of Dave’s Killer Bread. Unfortunately, Dave’s Killer Bread recipes are in the process of changing to a non-wfpb version with oil.

This was very good. It will be a standby for anytime. I have a question: Why don’t you offer “skip to recipe” and nutrition totals? Many of us have to watch various nutrient totals (such as for kidney disease) and total are essential. I really like your site and would like to follow more.

We offer the ones that are most used for the Whole Food Plant Based lifestyle. There are too many factors like using “no sodium tomatoes”, :low-sodium tomatoes” and “regular canned tomatoes” for example that make a huge difference for individuals how have kidney disease and heart disease.
