Avocado Spinach Mushroom Toast

Description

Raise your hand if you love avocadoes! We’ve got both hands high in the air, and this tasty dish is the perfect avocado fix. From quick breakfasts to easy lunches to kid-friendly snacks, every bite is filled with avocado deliciousness and nourishing ingredients. Quick, easy, and simple, this Avocado Spinach Mushroom Toast is the perfect way to dish up yumminess. We hope you love this week’s awesome Whip It Up Wednesday recipe.

Whole Food Plant Based, vegan, plant based, oil free, refined sugar free, no highly processed ingredients, and gluten free.


Ingredients

Scale
  • 4 oz. sliced mushrooms (of choice)
  • 2 teaspoons low-sodium tamari * (+/-)
  • ¼ medium red onion, cut into thin slices
  • 3 handfuls baby spinach
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • Sprinkle sea salt (+/-) *
  • Sprinkle black pepper (+/-)
  • 2 Tablespoon water (or vegetable broth) 

Other Ingredients:

  • 1 avocado, mashed
  • Sprinkle hemp seeds
  • Gluten Free Toasts (GF English Muffins, quinoa flatbreads, base of choice)

Instructions

  1. In an enamel/ceramic lined skillet or similar non-stick skillet, add the sliced mushrooms and 2 teaspoons tamari, sauté for 4 to 5 minutes over medium-high heat to allow the mushrooms to release their liquid. Add a splash of water if needed.
  2. Push the mushrooms to the side of the skillet, then add the sliced red onions, baby spinach, garlic powder, onion powder, sea salt, black pepper and 2 Tablespoons of water. Sauté for a few minutes until the spinach is wilted and the red onions start to soften.  When the onions reach the desired tenderness, remove from the stove, set aside.
  3. Mash the avocado. Toast the bread (or English Muffin), then place a layer of mashed avocado onto the toast, top with the mushroom/red onion/baby spinach mixture and sprinkle with a tiny bit of hemp seeds.
  4. Enjoy!

Notes

*Tip: We like the taste of avocado and found that the delicious mushroom, spinach, onion topping was perfect  without adding any additional seasoning to the mashed avocado. However, if you are not a huge avocado fan yet, you can add a sprinkle of garlic powder, onion powder, salt, and pepper into the mashed avocado.

*Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium.  You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos.

*Mushrooms:  You can use your favorite mushroom.  We used button mushrooms.

*Sea Salt:  Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

*Serving:  Makes 2-3 avocado toasts.

*Storage:   Refrigerate, use within the day.
