We savored them together, layered with cozy, creamy oat goodness, and by the time we reached the last bite, the jars were emptied and our hearts full.

Tips for Success:
- Flavor Profile: These Almond Croissant Overnight Oats are rich, buttery indulgence. These wholesome, creamy overnight oats taste like pure decadence. Dreamy, creamy oats are layered with a rich frangipane layer with toasted almond slices throughout.
- Texture: The frangipane layer has some “sandy” texture due to the almond flour mixed with maple syrup and almond butter. For those who have texture issues, this recipe may not be for you. We absolutely loved it, but we can see how individuals who have textural issues may not enjoy it.
- What is a Frangipane? Frangipane is a sweet spreadable paste made from almond flour, butter, sugar, eggs, and almond extract. It is then baked inside croissants or other French pastries. We made a Whole Food Plant Based version to use with these overnight oats.
- Rolled Oats: We used gluten free whole grain rolled oats. Feel free to used regular whole grain oats. Do not use instant oats.
- Fast One Hour Method Alternative: We loved these oats so much that we found ourselves making them over and over again. We simply couldn’t wait for them to be ready overnight. So, we tested them using Quick Oats. They worked fantastic. You only need to make them using quick cooking rolled oats instead over whole grain rolled oats, then put them in the fridge and wait one hour. We used Bob’s Red Mill Gluten Free Organic Quick Cooking Oats.
- Yogurt: Use an unflavored, plain plant yogurt or use a vanilla flavored, unsweetened plant yogurt. If using a vanilla flavored yogurt, leave out the vanilla.
- Vanilla: If using vanilla flavored unsweetened yogurt, leave out the vanilla.
- Almond Extract: Start on the low end as we have found some almond extracts are really strong while other are more passive.
- Almond Substitutions: There are no substitutions for the almond slices, almond flour, or almond butter. This entire recipe is based upon almonds.
- Maple Syrup Substitutions: Feel free to use your favorite sweetener, or none at all.
- Sweetness: The beauty of this recipe is that you can taste the end product before serving. Feel free to ramp up the maple syrup if needed.
- Cinnamon: Not all cinnamon is created equal. Some brands of cinnamon are light and passively flavored while others are strong, sharp, and astringent. Use judgement and start on the low end. Note that Ceylon cinnamon has a very light flavor. You can use your favorite cinnamon in this recipe; however, we strongly suggest starting on the low end until you have a strong understanding of how the cinnamon that you are using in this recipe impacts the flavor.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
Leftovers and Freezing:
Leftovers will generally keep 3 days in the refrigerator. Store in a covered air-tight container.
These overnight oats do not freeze well.
Pantry Products:
- Almond Butter: We used Artisana Organics Raw Vegan Almond Butter. Feel free to use your favorite raw almond butter in this recipe. Read the label, make sure the only ingredient is raw almonds. Do not use a salted or sweetened almond butter.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
Kitchen Equipment:
- Glass container (for making the overnight oats)
- For serving: Overnight oats glass mugs with lids (we used 4 pcs Set Overnight Oats Containers with Bamboo Lids (feel free to use your favorite containers)
- Skillet (for toasting the almond slices)

Ingredients
Overnight Ingredients:
- 1 cup rolled oats *
- 1 cup unsweetened plain plant milk
Base Ingredients:
- 1 Tablespoon pure maple syrup (+/-) *
- ½ cup plain unsweetened plant yogurt (or vanilla yogurt) *
- 1 teaspoon vanilla *
- 1 teaspoon almond extract (+/-) *
- ¼ teaspoon cinnamon *
- 1/8 teaspoon sea salt (+/-) *
Frangipane Ingredients:
- ½ cup almond flour
- 2 Tablespoons unsweetened almond butter *
- 2 Tablespoons pure maple syrup
- 2 Tablespoons unsweetened plain plant milk
- 1/4 teaspoon almond extract
- 1/8 teaspoon sea salt (+/-) *
Other Ingredients:
- 1 cup toasted almond slices, divided
Topping Ingredients:
- Sprinkle toasted almond slices (from above)
- Drizzle pure maple syrup
Instructions
- Place the rolled oats and unsweetened plain plant milk into a bowl, mix well, cover and refrigerate overnight.
- Toast the almond slices. Place the almond slices into a medium-sized nonstick skillet and dry toast them over medium heat for 3 to 4 minutes or until the almond slices are lightly golden. Stir them around the pan to ensure they do not burn. When lightly golden, immediately remove them from the skillet onto a plate.
- Make the frangipane. Place all the Frangipane Ingredients into a small bowl, mix well, set aside.
- Just before serving add all the Base Ingredients (including 1/2 cup of the toasted almond slices) and mix thoroughly with the Overnight Oat mixture.
- Place the some of the Overnight Oat Mixture into 2 glass jars or serving cups, add the Frangipane on top of the Overnight Oat Mixture, spread it out evenly over the bottom layer of the Overnight Oat Mixture. Sprinkle with some more toasted almonds. Then top with the remaining Overnight Oat Mixture over top of the Frangipane/Toasted Almond layer. To top, sprinkle with remaining toasted almond slices and a drizzle of maple syrup. Enjoy!
