- Flavor Profile: This Oil Free Low Fat Taco Dressing is full of taco flavors, low in fat using silken tofu, it is tasty and creamy.
- Salsa: Feel free to use your favorite salsa with the understanding that the salsa is the base of the dressing so it should be one that you really enjoy.
- Taste Testing Salad Dressings: There is an art to arriving at the slaw/salad dressing that perfectly suits your tastes. The best way to test salad dressings is to place a few leaves of lettuce in a tiny bowl, put a tiny bit of the salad dressing over top and mix really well, then taste test. Some salad dressings taste amazing before you dress the salad, then once dressing the salad, the salad falls flat. That is because the salad dressing has to cover all the salad ingredients which then flattens the flavor of the dressing. Additionally, some salad dressings taste really tangy or overly strong before dressing the salad, but once you dress the slaw/salad, it coats all the ingredients and tastes amazing.
- Low-Fat Dish Expectations: This dressing was designed to be low in fat. Because it is low in fat, you are not going to experience that endorphin rush associated with eating high-fat salad dressings. It is very tasty for what it is, and that is a low-fat dressing. We just want to make sure that our Readers recognize this when contemplating making this recipe. If you wish to make it more indulgent, try one of our cashew-based dressings.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dressing can be frozen; however, tastes best refrigerated.

Ingredients
Base Ingredients:
- ¾ cup salsa *
- ½ cup silken tofu (4.2 oz.)
- 1 Tablespoon + 2 teaspoons apple cider vinegar (+/-)
- 1 Tablespoon pure maple syrup (+/-)
- 1 Tablespoon nutritional yeast
- 1 teaspoon lime juice
Spice/Herb Ingredients:
- 1 teaspoon chili powder (+/-)
- ½ teaspoon cumin (+/-)
- ¼ teaspoon smoked paprika (+/-)
- 1/8 teaspoon coriander (+/-)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ to 1 teaspoon sea salt (+/-) *
Instructions
- Place all the Base Ingredients and all the Spice/Herb Ingredients into a high-speed blender. Blend on high until smooth and emulsified.
- Refrigerate for 10 minutes to allow the flavors to develop. Enjoy!
