Tips for Success:
- Flavor Profile: This tasty salad is full of yummy Southwestern flavors.
- Salsa: Use your favorite salsa as the salsa is the major flavor component for this salad.
- Low-Fat Dish Expectations: This dish was designed to be low in fat. Because it is low in fat, you are not going to experience that endorphin rush associated with eating high-fat foods when eating this dish. It is very tasty for what it is, and that is a low-fat dish. We just want to make sure that our Readers recognize this when contemplating making this recipe. If you wish to make it more indulgent, then top with chopped avocado!
- Corn: Feel free to use fresh, frozen (thawed) or canned corn. We used canned corn.
- Green Onions: We enjoy green onions. If you have concerns about the amount of green onions then start low and build from there.
- Regular Chili Powder: Feel free to use your favorite chili powder, just be sure to select a mild one and not one that has a lot of heat to it.
- Rice Vinegar: While rice vinegar seems odd in a Southwestern flavored salad, it adds the perfect hit of acid and sweetness. If you wish to substitute with another vinegar, you may need to add more maple syrup.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This salad cannot be frozen.

This Oil Free Black Eyed Pea Corn Salad is packed with fresh, wholesome ingredients boasting a delightful Southwestern vibe!
Ingredients
Base Ingredients:
- 2 – [ 15.5 oz. cans ] black eyed peas, drained and rinsed
- 1 – [ 15.25 oz. can ] corn, drained
- 2/3 cup chopped green onions (+/-) *
- 1 orange (or red) bell pepper, fine dice
- ¼ to ½ cup chopped fresh cilantro (+/-)
Dressing Ingredients:
- 1 ¼ cup salsa *
- 3 Tablespoons lime juice
- 1 teaspoon pure maple syrup (+/-)
- 1 Tablespoon rice vinegar *
- ½ teaspoon cumin
- ½ teaspoon chili powder *
- 1/8 teaspoon smoked paprika
- 1/8 teaspoon coriander
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ to ¾ teaspoon sea salt (+/-) *
Instructions
- Place all the Base Ingredients into a bowl, set aside.
- Place all the Dressing Ingredients into a medium bowl, whisk well until smooth and emulsified.
- Pour the dressing over the Base Ingredients, mix well. Serve at room temperature or cold. If serving from the refrigerator, remove salad approximately 25 minutes before serving to allow the flavors to wake up. Enjoy!

I made your recipe for tonight’s potluck! I was out of canned black eyed peas, so I substituted pinto beans. I used 2 cups of frozen corn and then omitted the salt. Let’s just say that VERY little came back home afterwards. So good — thank you!
