- Flavor Profile: This White Bean Rosemary Soup with Kale is easy to make and low in fat. It features hearty white beans swimming in a lightly creamy rosemary flavored broth with kale.
- Rosemary: This soup is for rosemary lovers. If you are not a fan of rosemary, then consider skipping this recipe. We used rosemary powder. Feel free to use crushed rosemary or fresh rosemary (one sprig).
- Greens: Greens such as spinach and kale are natural spice/herb neutralizers. A soup/stew can taste perfectly seasoned before adding the greens, then once the greens are added, the flavor mellows requiring more seasoning.
- Low-Fat Dish Expectations: This dish was designed to be low in fat. Because it is low in fat, you are not going to experience that endorphin rush associated with eating high-fat foods when eating this dish. It is very tasty for what it is, and that is a low-fat dish. We just want to make sure that our Readers recognize this when contemplating making this recipe. If you wish to make it more indulgent, add the Vegan Parmesan Cheese on individual servings. The vegan parmesan cheese totally takes it over the top.
- Overnight Flavor: As with a lot of soups, this soup tastes even better the next day as the flavors intensify overnight in the fridge.
- Cannellini Beans: We used cannellini beans, feel free to use your favorite white bean in this soup.
- Soup Broth Texture: The broth in this soup is not thick. If you want a thicker broth, do not drain or rinse the cans of beans, simply place them fully in the soup. You may need to add some additional seasonings.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This soup can be frozen.

Ingredients
Base Ingredients:
- 1 medium yellow onion, fine dice
- 2 medium carrots, diced (1 cup)
- 2 celery ribs, diced (1/3 cup)
- 1 Tablespoon minced garlic
- 2 cups low-sodium vegetable broth *
- 3 cups water
- ¼ cup nutritional yeast
Spice/Herb Ingredients:
- 1 ½ teaspoons garlic powder
- 1 teaspoon onion powder
- 1 Tablespoon dried minced onions
- ½ teaspoon dried rosemary (powder) *
- 1 Tablespoon dried parsley
- ½ to 1 ¼ teaspoons sea salt (+/-) *
- ¼ teaspoon black pepper (+/-)
Other Ingredients:
- 2 – [ 15 oz. cans ] cannellini beans, drained and rinsed *
- 4 cups lacinato (dinosaur) kale (or preferred greens) *
Instructions
- Place the Spice/Herb Ingredients in a small bowl, mix well, set aside.
- In a large stock pot, add the diced onions, carrots, and celery; sauté over medium heat until they begin to soften, approximately 7 to 9 minutes. Add a couple of tablespoons or so of water if they start to stick and/or to prevent burning.
- Add the minced garlic, sauté for one minute.
- Add all the remaining Base Ingredients and Spice/Herb mix, stir well to combine. Bring to a boil, then immediately lower to a simmer.
- Add the cannellini beans, stir to incorporate. Simmer at a low-boil for 10 minutes.
- Add the chopped kale, stir well, then simmer an additional 10 minutes or until the onions, carrots, and celery are perfectly tender and the kale is wilted and tender.
- Remove from the stove and allow to sit for 5 minutes to allow the flavors to marry, serve and enjoy!
