- Flavor Profile: This Oil Free, Nut and Seed Free, Creamy Italian Bean Dressing is a quick and easy dressing to make and is full of Italian herbaceousness.
- Low-Fat Dish Expectations: This dressing was designed to be low in fat. Because it is low in fat, you are not going to experience that endorphin rush associated with eating high-fat, calorically dense dressings. It is very tasty for what it is, and that is a low-fat, oil-free dressing. We just want to make sure that our Readers recognize this when contemplating making this dressing. - Cannellini Beans: Feel free to substitute with your favorite white bean.
- Thickness of Dressing: This dressing is thick and creamy. If it is too thick, feel free to add an additional tablespoon of water or some additional red wine vinegar. Start by adding a tablespoon of water and stirring vigorously, then taste test and check the viscosity of the dressing, then add either more water or a teaspoon of red wine vinegar and stir vigorously, repeat until the desired dressing thickness has been achieved.
- High Speed Blender, Food Processor, or Hand-Mashing: This dressing is best made with a high-speed blender. You can use a food processor as well; however, the texture will not be quite as smooth. If you have neither a high-speed blender or a food processor, you can use a fork and really mash the beans, mash until you have reached a paste and stir vigorously to homogenize the ingredients. Obviously, hand mashing will has some slight remnants of beans.
- Italian Seasoning: Do not place the blitz the Italian Seasoning in the high-speed blender, you can add at the very end and pulse a few times. Sometimes, herbs can become slightly bitter when pulverized by a high-speed blender.
- White Miso: The miso lends a savoriness and punches the flavor. If you don’t have any on hand, you can potentially leave it out. Miso is fantastic, fairly inexpensive (as you don’t need to use a lot), lasts a long time in the fridge, and helps balance flavors. We use it often. If you type Miso in our search bar, you will find a ton of recipes that use it incase you were concerned about purchasing a product that you wouldn’t use again.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 to 7 days in the refrigerator. Store in a covered container.
This dressing can be frozen.

- Miso: We used Miso Master Organic Mellow White Premium Lite Miso, Certified Gluten Free. Miso really lends itself to balancing flavors when you don’t use oil. You can also use chickpea miso for a soy free version.

Ingredients
Blender Ingredients:
- 1 – [ 15.5 oz. can ] cannellini beans, drained and rinsed
- ¼ cup + 1 teaspoon red wine vinegar (+/-)
- ¼ cup + 2 Tablespoons water (+/-) *
- 1 Tablespoon pure maple syrup (+/-)
- 2 Tablespoons nutritional yeast
- 1 Tablespoon white miso *
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Pinch to 1 teaspoon sea salt (+/-) *
Other Ingredients:
- 2 teaspoons Italian Seasoning (+/-) *
Instructions
- Place all the Blender Ingredients into a high-speed blender (or food processor), blend or process on high until smooth and emulsified.
- Next add the Italian Seasonings and pulse several times, just to mix in, do not blend. Place in the refrigerator for 10 minutes to allow the Italian Seasonings to infuse in the dressing. Serve and enjoy!
