Tips for Success:
- Flavor Profile: This Garden Veggie Sauce is full of flavor and is excellent on raw or steamed veggies, mixed in steamed brown rice or used as a salad dressing. This sauce is full of nutrient rich ingredients that are a powerhouse of vitamins, minerals, and immune boosters. The ingredients follow the Candida Elimination Diet and the Whole Food Plant Based Diet.
- Candida Elimination Diet: Candida is an overgrowth of yeast in the body resulting in various health concerns including eczema, fatigue, headaches, hormonal changes, yeast infections, and a host of digestive issues. Eliminating foods that feed the yeast such as sugar, fruit, certain grains like wheat, or anything that feeds yeast like vinegar, refined carbohydrates, etc. must be eliminated from the diet in order to stop feeding the yeast and promote gut healing.
- Candida Elimination Diet Flavor Palate: The Candida Elimination Diet removes a number of foods that are generally used to build and enrich flavor. This sauce is delicious for what it is and that is a recipe that works with the foods that are permitted on the Candida Elimination Diet. We just want the Reader to be aware that if you are looking for a fantastic tasting sauce, this recipe is not going to give you an endorphin high like normal sauces. It is very tasty for what it is. If you are looking for a rich and satisfying sauce, then search for other sauce recipes on our website. We have tons of healthy and satisfying sauce recipes.
- Water: We used 3 Tablespoons of water. Feel free to increase or decrease the amount of water to suit your personal preferences.
- Lemon Juice: Feel free to use fresh lemon juice or store-bought lemon juice.
- Small Tomatoes: We used 2 small golf-ball sized tomatoes. The weight was approximately 2.7 to 3.0 ounces (total). This is the weight for both tomatoes combined. If you use larger tomatoes, then the sauce will be thinner. We have found that Campari tomatoes have excellent flavor especially during the winter months when it is hard to find a great tasting tomato.
- Tomatoes/Candida Diet: Tomatoes are generally allowed. They are a non-starchy vegetable, low in sugar, rich in nutrients; however, individuals with severe sensitivities or inflammatory conditions may need to eliminate them from their diet or monitory closely their symptoms. If you experience food sensitivities from eating tomatoes, then skip this recipe.
- Bell Peppers/Candida Diet:Â Bell peppers are generally allowed. They are a non-starchy vegetable, low in sugar, nutrient rich. While bell peppers are generally safe, please note that some individuals with severe sensitivities or inflammatory conditions may need to eliminate them from their diet or monitor closely their symptoms. If you experience food sensitivities from eating bell peppers, then skip this recipe.
- Tamari: The tamari adds another layer of flavor. Don’t sweat it if you don’t have any in your pantry; however, if you do, please use it.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered air-tight container.
This sauce can be frozen but is best served freshly made.
Pantry Products:
- Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos. We recommend using reduced-sodium products.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Ingredients
Base Ingredients:
- ½ cup [raw] pepitas
- 1/3 cup lemon juice *
- ½ red bell pepper, chunked
- 2 small tomatoes, cored and chunked *
- ½ cup packed fresh parsley (leaves only)
- 3 Tablespoons water
- 1 teaspoon reduced-sodium tamari (optional) *
Herb/Spices Ingredients:
- ¼ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon dried dill weed
- ¼ teaspoon sweet paprika
- Pinch to 1 teaspoon sea salt (+/-) *Â

- Over steamed veggies or brown rice

Instructions
- Place all the Base Ingredients and all the Herb/Spice Ingredients into a high-speed blender, process until smooth and emulsified. Enjoy! Refrigerate leftovers.
