- Flavor Profile: This French Onion Mushroom White Bean Skillet is a deliciously mushroom, onion, and bean dish that is full of French onion flavors. Perfectly creamy and hearty, this skillet dinner is sure to please French onion lovers everywhere.
- Texture of the Dish: The texture of the dish is thick and creamy. If do not enjoy soft long strips of onions, then perhaps consider skipping this dish or consider finely dicing the onions.
- French Onion Flavor: Does it taste like authentic French Onion? No, it doesn’t, but you definitely get a great nod to French onion flavors.
- Large White Onion: We used a large white onion due to its mild and sweet flavor. You can substitute with other onions if you wish with the understanding that the flavor will slightly change accordingly.
- Baby Bella Mushrooms: We used Baby Bella Mushrooms, feel free to use your favorite mushrooms.
- Cannellini Beans: We used cannellini beans; however, feel free to use your favorite white bean.
- Dried Minced Onions: Dried minced onions add wonderful, mild onion flavor as well as boost the onion flavor.
- Cashew Substitutes: You can try the typical cashew substitutes: silken tofu, white beans, other nuts or seeds with the understanding that the flavor and texture will change accordingly. You may need to adjust/add ingredients to compensate. We have not tested any substitutions.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dish can be frozen.
Pantry Products:
- Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos. We recommend using reduced-sodium products.
- Vegetable Stock: We use Pacific Organic Low Sodium Vegetable Stock. We love this brand because it is Whole Food Plant Based compliant, as it does not contain MSG, has no oil, and does not contain any highly-processed ingredients. Feel free to use your favorite vegetable broth.
- Dried Crushed Thyme Leaves: If you can’t find dried crushed thyme leaves, you can use ground thyme but use half the amount.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Description
This French Onion White Bean Skillet is a delightful medley of savory mushrooms, caramelized onions, and hearty white beans, all infused with the rich essence of classic French onion soup.
Ingredients
Skillet Ingredients:
- ½ cup [raw] cashews *
- 8 to 10 oz. Baby Bella mushrooms, sliced
- 1 Tablespoon reduced-sodium tamari *
- 1 large white onion, quartered, sliced *
- 2 Tablespoons minced garlic
- 1 cup low-sodium vegetable broth *
- 1 cup water
- ¼ cup nutritional yeast
- 1 Tablespoon red wine vinegar
Spice/Herb Ingredients:
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 Tablespoons dried minced onions
- ¼ teaspoon dried ground mustard powder (+/-)
- ¼ teaspoon black pepper (+/-)
- ¼ to 1 teaspoon sea salt (+/-) *
- ¾ teaspoon dried crushed thyme leaves (+/-) *
Other Ingredients:
- 2 – [ 15.5 oz. cans ] cannellini beans, drained and rinsed *
Instructions
- Place the cashews into a small bowl, cover with boiling water and allow to soak for 10 to 15 minutes, then drain (discard the water), and set aside until Step 5.
- Place the Spice/Herb Ingredients (except the dried crushed thyme leaves) in a small bowl, mix well, set aside.
- In a large skillet, add the sliced mushrooms and tamari, sauté over medium heat until the mushrooms are reduced, approximately 5 minutes, then remove from the skillet.
- Next add the sliced white onions to the skillet, sauté over medium-high heat for 7 to 9 minutes (or longer) to soften them until perfectly tender, add several tablespoons of water to avoid burning. Then lower the heat to medium, add the minced garlic, sauté, stir constantly for one minute.
- Then add all the remaining Skillet Ingredients (except the water) to the skillet, stir to incorporate, bring the mixture to a boil, then immediately lower to a simmer. Simmer for 3 minutes.
- In the meantime, make the cashew cream by placing the soaked cashews, water, and the Spice/Herb Mix (excluding the thyme) into a high-speed blender. Blend on high for 30 to 60 seconds until smooth and emulsified, then add to the skillet.
- Add the sautéed mushrooms and dried crushed thyme leaves to the skillet mixture. Stir to incorporate. Heat to boiling, then reduce the heat to a simmer. Simmer for several minutes.
- Add the beans, stir to incorporate, then simmer over medium heat for several minutes to heat the beans through and to allow the flavors to marry. Serve and enjoy!

Wow! This was really really good, AND pretty easy to make. The sauce seemed a bit thick at the end, so I just added a bit more veggie broth. The onions were very nice, just slightly crunchy… if I do it again I might double the mushrooms, just because I ❤️ mushrooms! served it over some black rice I had leftover from last night. I made this tonight and it was great! Ate it as a sauce over penne pasta. Left the beans on the side because I only had cans of kidney and pinto beans and the sauce tasted so good I didn’t want to mess with it. Husband and daughter both loved it.
