Description

This French Onion White Bean Skillet is a delightful medley of savory mushrooms, caramelized onions, and hearty white beans, all infused with the rich essence of classic French onion soup.

Skillet Ingredients:

  • ½ cup [raw] cashews *
  • 8 to 10 oz. Baby Bella mushrooms, sliced
  • 1 Tablespoon reduced-sodium tamari *
  • 1 large white onion, quartered, sliced *
  • 2 Tablespoons minced garlic
  • 1 cup low-sodium vegetable broth *
  • 1 cup water
  • ¼ cup nutritional yeast
  • 1 Tablespoon red wine vinegar 

Spice/Herb Ingredients:

  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 Tablespoons dried minced onions
  • ¼ teaspoon dried ground mustard powder (+/-)
  • ¼ teaspoon black pepper (+/-)
  • ¼ to 1 teaspoon sea salt (+/-) *
  • ¾ teaspoon dried crushed thyme leaves (+/-) * 

Other Ingredients:

  • 2 – [ 15.5 oz. cans ] cannellini beans, drained and rinsed *

Instructions

  1. Place the cashews into a small bowl, cover with boiling water and allow to soak for 10 to 15 minutes, then drain (discard the water), and set aside until Step 5.
  2. Place the Spice/Herb Ingredients (except the dried crushed thyme leaves) in a small bowl, mix well, set aside.
  3. In a large skillet, add the sliced mushrooms and tamari, sauté over medium heat until the mushrooms are reduced, approximately 5 minutes, then remove from the skillet.
  4. Next add the sliced white onions to the skillet, sauté over medium-high heat for 7 to 9 minutes (or longer) to soften them until perfectly tender, add several tablespoons of water to avoid burning. Then lower the heat to medium, add the minced garlic, sauté, stir constantly for one minute.
  5. Then add all the remaining Skillet Ingredients (except the water) to the skillet, stir to incorporate, bring the mixture to a boil, then immediately lower to a simmer. Simmer for 3 minutes.
  6. In the meantime, make the cashew cream by placing the soaked cashews, water, and the Spice/Herb Mix (excluding the thyme) into a high-speed blender. Blend on high for 30 to 60 seconds until smooth and emulsified, then add to the skillet.
  7. Add the sautéed mushrooms and dried crushed thyme leaves to the skillet mixture. Stir to incorporate. Heat to boiling, then reduce the heat to a simmer. Simmer for several minutes.
  8. Add the beans, stir to incorporate, then simmer over medium heat for several minutes to heat the beans through and to allow the flavors to marry.  Serve and enjoy!
