Tips for Success:
- Flavor Profile: This recipe is all about thinly sliced tender-sauteed cabbage that gives the essence of a sauerkraut look and mouthfeel. The flavor profile has a reuben-esque nod to it. It is not going to taste exactly like a reuben, but it will definitely remind you of one with its sauerkraut style of cabbage, caraway seeds, and stone ground mustard flavor forwardness.
- Low-Fat Dish Expectations: This dish was designed to be low in fat (sans the optional nuts). Because it is low in fat, you are not going to experience that endorphin rush associated with eating high-fat foods when eating this dish. It is very tasty for what it is, and that is a low-fat dish. We just want to make sure that our Readers recognize this when contemplating making this recipe. If you wish to make it more indulgent, add the toasted nuts. We used toasted pine nuts.
- Food Processor – We used a #2 (2mm) slicing blade for our 14 cup Cuisinart Food Processor. The Cuisinart Food Processor typically comes with a thicker slicing blade. We prefer the thinner blade for fine slicing. You want very thin slices to get that sauerkraut type look and feel.
- Liquid: One cup of vegetable broth will give you a small amount of liquids that you would typically get with sauerkraut. If you want more liquid, feel free to add more vegetable broth.
- Ground Caraway Seeds: Caraway seeds are typically found in rye bread which is the type of bread often used to make a Reuben sandwich. If you are not fond of caraway, perhaps skip this recipe.
- Stone Ground Mustard: Our family typically loved Reuben sandwiches with stone ground mustard rather than the traditional Russian dressing. Feel free to add more or reduce the amount.
- Apple Cider Vinegar: The apple cider vinegar was very controversial with family members. Some loved that little extra vinegar zing while others preferred it without the apple cider vinegar. Do not add it until the end after you have tasted the dish. Add a small amount or up to 1 Tablespoon depending on how you feel about the dish after tasting.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This dish can be frozen.
Pantry Products:
- Vegetable Stock: We use Pacific Organic Low Sodium Vegetable Stock. We love this brand because it is Whole Food Plant Based compliant, as it does not contain MSG, has no oil, and does not contain any highly-processed ingredients. Feel free to use your favorite vegetable broth.
- Stone Ground Mustard: We used Koops Stone Ground Mustard. Feel free to use your favorite stone ground mustard.
- Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs

Ingredients
Base Ingredients:
- ½ green cabbage, thinly sliced (approx. 20 to 22 oz.)
- 1 large yellow onion, diced
- 2 Tablespoons minced garlic
- 1 cup low-sodium vegetable broth, divided (+/-) *
- 3 to 4 Tablespoons stone ground mustard (+/-) *
- 1 Tablespoon reduced-sodium tamari *
- 1 Tablespoon apple cider vinegar (optional) *
Spice/Herb Ingredients:
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon ground caraway seeds *
- Pinch to 1 teaspoon sea salt (+/-) *
- Pinch black pepper (+/-)
Serving Ideas:
- Mashed potatoes
- Sandwich
Instructions
- Place the Spice/Herb Ingredients into a small bowl, mix well, set aside.
- In a large, deep skillet, sauté the diced onions over medium-high heat for 6 to 7 minutes until softened, add a splash of water to prevent burning, if needed
- Add the minced garlic, stir constantly for 30 seconds.
- Add the thinly sliced cabbage, ½ cup of the vegetable broth, and the Spice/Herb Mix, sauté for several minutes on medium-high until the cabbage starts to wilt.
- Add the 3 Tablespoons stone ground mustard and tamari, continue to sauté for several minutes. Add the remaining ½ cup of vegetable broth and sauté until perfectly tender.
- Taste test, if needed, add the apple cider vinegar and the last tablespoon of stone ground mustard (if needed). Simmer for several minutes.
- Serve over mashed potatoes or in a sandwich.
