This week’s Whip It Up Wednesday is our fantastic Cilantro Lime Hummus. You won’t believe how easy it is to make. Five ingredients and you are on your way to flavor town! We absolutely love our hummus recipe. We think it is one of the best! We can say that because we were taught by the best Lebanese folks there are… my husband’s Lebanese family.
Almost every weekend we make our homemade hummus. Here is the link to our Hummus recipe if you are interested, or you can use any plain store-purchased WFPB hummus (oil free, of course).
Cilantro + Lime = Heaven
Of course, Michael would die to hear how hummus is being transformed into so many delicious recipes. To him, hummus is hummus is hummus, and there are no other varieties other than plain hummus, end of story!
…however, he is married to a food blogger and food bloggers gotta do what food bloggers do best, and that is spin and twist recipes into new ideas and delicious dishes. And that is exactly what Mom and I did with 2 cups of plain ole hummus!!!
Put it on Everything!
We had some leftover baked sweet potatoes and some left-over hummus and decided to make a simple Southwestern meal out of it. When those Southwestern flavors come together, we just can’t help ourselves – YUM!
We took the left-over hummus, jazzed it up, and made a zesty Cilantro Lime Hummus that is amazing! We placed some of that deliciousness down on a plate with a little swirl, added half of a baked sweet potato, and topped it with this beautiful, oil free Cilantro Lime Corn Salad.
The creamy cold hummus coupled with the hot baked sweet potato, followed by the refreshing corn salad made for an awesome combination. We gobbled it right down!

Whip it up Wednesday
As you already know, every Wednesday, we feature a quick and easy recipe that can be “whipped up” in 20 minutes or less. This recipe can be made in about 5 minutes, which really helps speed things up in the kitchen.

Ingredients
- 2 cups plain hummus (WFPB store-bought or Our Hummus Recipe)
- 1 cup fresh cilantro leaves
- 1 teaspoon lime zest
- 1 Tablespoon + 1 teaspoon fresh lime juice
- 1/8 teaspoon dried ground coriander
Instructions
- Add all the ingredients into a food processor, process for 1 to 2 minutes, until everything is well combined. Taste test, adjust seasonings, if needed, to achieve the desired flavor.
Notes
*Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
*Serving: Makes about 2 cups.
*Storage: Refrigerate and use within 5 days.

I just made your cilantro lime hummus. It tastes great, but it’s definitely NOT the color of yours. It’s just got green specks. Did I not add enough cilantro?

Yaaaay! We are so glad that you enjoyed this recipe. Hmmm, perhaps we used more cilantro? Also, depending on your original hummus recipe used, it could change the overall color. We use our hummus recipe, which creates a very light-colored/whiteish looking hummus and maybe that is why it picked up the green color more? Not sure, but we are glad the flavor was great!

How firmly packed should the cilantro be? Cilantro and lime are da bomb; I can’t wait!

It really depends on how much you love cilantro. 🙂
We suggest starting with just packing the cilantro in where you are not pushing the cilantro really hard down into the measuring cup, but giving it a nice push. Then buzz and taste test. If you enjoy the flavor you are done. If you want more cilantro flavor, just add more to the food processor or high-speed blender and continue until you have reached the desired flavor. Thank you for your question. The hummus recipe calls for lemon juice; however, if you have your own recipe or store-bought, it may or may not have lemon juice. The recipe for the Cilantro Lime Hummus has only lime juice. We hope this helps.
