When we stumbled upon the TikTok spin-off of this recipe, we were inspired to create our unique version. There’s something truly enchanting about completely coating the rice cake with melted chocolate, which then hardens into a magical shell. Paired with creamy peanut butter, sweet bananas, and crunchy peanuts, these tasty treats are sure to hit the spot.

Tips for Success:
- Flavor Profile: This crazy delicious chocolate and peanut butter rice cake snack is a delicious breakfast treat or afternoon snack based upon the viral TikTok version. The chocolate becomes hard like a magic shell completely coating the crunchy rice cake making for the perfect texture.
- Coating the Rice Cakes with Melted Chocolate: Melt the chocolate in a glass bowl wide enough for the rice cake to fit in the bottom. Once the chocolate has melted, drop the rice cake into a bowl, dip and flip the rice cake into the melted chocolate. Make sure all sides and edges of the rice cake are coated in a thin layer of chocolate. You may need to use the side of your finger to gently slide across the rice cake to remove any extra thick melted chocolate back into the bowl. Make sure the rice cake is completely coated and none of the white peaks through. This part can get a bit messy, but it is totally worth it. It creates that beautiful magic chocolate shell once set in the freezer.
- Make it Easier and Less Messy: If you don’t want to get messy, simply dip the bottom of the rice cake into the chocolate, then flip and place onto the parchment-line baking sheet with the uncoated side facing down. Then simply freeze until the melted chocolate is set, then add the peanut butter (and bananas). Then spoon another layer of melted chocolate over top, completely coating the entire top and freeze. We prefer the entire coating of chocolate method; however, this method is less messy.
- Optional Drizzle of Chocolate: Use the excess melted chocolate for drizzling (see blog photos). Place a plastic sandwich bag into a small juice glass with one of the edges of the bag pointed down. Scoop the melted chocolate into the sandwich bag. Press to the corner, twist the top of the bag, then snip off a tiny bit of the corner. Drizzle chocolate in diagonal directions. Pro Tip: Make sure there aren’t any pieces of the rice cake that may have crumbled off that could end up in the drizzling bag as that could clog up the drizzling process.
Leftovers and Freezing:
Store in the freezer. Freeze in a single layer on a parchment lined baking sheet. Once the chocolate and peanut butter are set and frozen, then place them in a freezer bag. They stack well once frozen. To serve, remove one from the freezer bag, place on a plate, and allow to sit at room temperature for approximately 10 minutes before serving.
Will keep up to one month in the freezer.

Ingredients
- 6 lightly salted rice cakes
- 1 – [ 10 oz. package ] vegan chocolate chips *
- ½ cup natural peanut butter (+/-)
- 1 small banana, sliced (optional)
- ¼ cup finely chopped peanuts (optional)
Instructions
- Line a baking sheet with parchment paper, set aside.
- Place the vegan chocolate chips into a glass bowl and microwave for 30 seconds, stir, and repeat in 15 second microwave intervals and stir vigorously until all the chocolate is melted and smooth.
- Place a rice cake into the melted chocolate, flip it over. Using your finger slide it over the entire rice cake to remove any excess melted chocolate back into the bowl. Once both sides of the chocolate (including the edges) are coated in a thin layer of chocolate, set on the parchment paper lined baking sheet. Place in the freezer until set, about 5 to 7 minutes.
- In the meantime, finely chop the peanuts, set aside (if using).
- Slice the bananas (if using). Do this right before taking the chocolate coated rice cakes out of the freezer to prevent the bananas from browning.
- After the chocolate has set on the rice cakes, place a generous dollop of natural peanut butter onto the rice cakes, spread it almost to the edges, then place the sliced bananas on top.
- Drizzle any remaining melted chocolate over top and sprinkle with the finely chopped peanuts. Place back in the freezer for 20 minutes.
- Remove the baking sheet from the freezer, remove the rice cakes from the baking sheet and place them in a freezer bag and freeze until ready to serve. When ready to serve, remove them from the freezer about 10 minutes before serving.

I couldn’t find any salted rice cakes, so just went with the plain and added some flakey sea salt after the melted chocolate. These were delicious! Such a fun little treat! And so awesome that they can be made ahead and stored in the freezer!
