Chocolate Peanut Butter Rice Cakes

Description

Indulge in the irresistible charm of these Chocolate Peanut Butter Rice Cakes that has taken TikTok by storm!


Ingredients

Scale
  • 6 lightly salted rice cakes
  • 1 – [ 10 oz. package ] vegan chocolate chips *
  • ½ cup natural peanut butter (+/-)
  • 1 small banana, sliced (optional)
  • ¼ cup finely chopped peanuts (optional)

Instructions

  1. Line a baking sheet with parchment paper, set aside.
  2. Place the vegan chocolate chips into a glass bowl and microwave for 30 seconds, stir, and repeat in 15 second microwave intervals and stir vigorously until all the chocolate is melted and smooth.
  3. Place a rice cake into the melted chocolate, flip it over. Using your finger slide it over the entire rice cake to remove any excess melted chocolate back into the bowl. Once both sides of the chocolate (including the edges) are coated in a thin layer of chocolate, set on the parchment paper lined baking sheet. Place in the freezer until set, about 5 to 7 minutes.
  4. In the meantime, finely chop the peanuts, set aside (if using).
  5. Slice the bananas (if using). Do this right before taking the chocolate coated rice cakes out of the freezer to prevent the bananas from browning.
  6. After the chocolate has set on the rice cakes, place a generous dollop of natural peanut butter onto the rice cakes, spread it almost to the edges, then place the sliced bananas on top.
  7. Drizzle any remaining melted chocolate over top and sprinkle with the finely chopped peanuts. Place back in the freezer for 20 minutes.
  8. Remove the baking sheet from the freezer, remove the rice cakes from the baking sheet and place them in a freezer bag and freeze until ready to serve. When ready to serve, remove them from the freezer about 10 minutes before serving.
