Tips for Success:
- Flavor Profile: These overnight oats were a favorite of Princess Diana. Chef Darren McGrady created this light and fresh tasting, unusual overnight oats. Oats mixed with orange juice with yogurt, then grated apples and toasted walnuts are added in and topped with fresh blueberries, toasted walnuts and a drizzle of maple syrup.
- Rolled Oats: We used gluten free whole grain rolled oats. Feel free to used regular whole grain oats. Do not use instant oats.
- Orange Juice: Chef Darren McGrady used freshly squeezed orange juice; however, feel free to use freshly squeezed or store purchased. The orange juice gives a fresh, clean flavor to the oats.
- Yogurt: Use an unflavored, plain plant yogurt or use a vanilla flavored, unsweetened plant yogurt. If using a vanilla flavored yogurt, leave out the teaspoon of vanilla.
- Vanilla: If using vanilla flavored unsweetened yogurt, leave out the vanilla.
- Grated Apples: We used a fuji apple, but feel free to use your favorite apple. Grate the apple, place in a small bowl, and mix the grated apples with 1 teaspoon of lemon juice to prevent browning.
- Toasted Walnuts: Place the walnuts into a dry skillet. Toast and stir constantly over medium heat until fragrant, about 5 to 7 minutes, then immediately transfer to a plate to cool completely. Do not allow the walnuts to remain in the hot skillet to cool as they will burn.
- Maple Syrup Substitutions: Feel free to use your favorite sweetener, or none at all.
- Sweetness: The beauty of this recipe is that you can taste the end product before serving. Feel free to ramp up the maple syrup if needed.
- Cinnamon: Not all cinnamon is created equal. Some brands of cinnamon are light and passively flavored while others are strong, sharp, and astringent. Use judgement and start on the low end. Note that Ceylon cinnamon has a very light flavor. You can use your favorite cinnamon in this recipe; however, we strongly suggest starting on the low end until you have a strong understanding of how the cinnamon that you are using in this recipe impacts the flavor.
Leftovers and Freezing:
Leftovers will generally keep 3 days in the refrigerator. Store in a covered air-tight container.
These overnight oats do not freeze well.

- Rolled Oats: We used Bob’s Red Mill Gluten Free Old Fashioned Whole Grain Rolled Oats, feel free to use your favorite whole grain rolled oats.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Ingredients
Overnight Ingredients:
- 1 cup rolled oats *
- 1 cup orange juice *
Base Ingredients:
- 1 Tablespoon pure maple syrup (+/-) *
- ½ cup plain unsweetened plant yogurt (or vanilla yogurt) *
- 1 medium apple, grated – (mixed with 1 teaspoon lemon juice) *
- ½ cup chopped toasted walnuts *
- 1 teaspoon vanilla *
- ¼ teaspoon cinnamon (+/-) *
- 1/8 teaspoon sea salt (+/-) *
Toppings:
- ¼ to ½ cup fresh blueberries
- Chopped toasted walnuts
- Drizzle pure maple syrup
Instructions
- Place the rolled oats and orange juice into a bowl, mix well, cover and refrigerate overnight.
- Just before serving add all the Base Ingredients and mix thoroughly.
- Place the oat mixture into 2 glass jars or serving cups, top with chopped toasted walnuts, fresh blueberries and drizzle with some maple syrup. Enjoy!
