We couldn’t believe how quickly this crunchy cabbage peanut slaw disappeared! It was gone in a flash — that’s how addictive and delicious it is. The combination of fresh, crisp vegetables coated in that creamy, nutty peanut dressing had everyone reaching back for seconds (and thirds!).
Seriously, you’ve got to give this recipe a try — it’s perfect for adding a burst of flavor and crunch to any meal. Whether you’re hosting a summer barbecue, bringing a dish to a family gathering, or just craving something healthy and satisfying, this slaw hits the spot.
Tips for Success:
- Flavor Profile: This Oil Free Crunchy Cabbage Peanut Slaw is both healthy and delicious. A creamy peanut dressing coats a tasty fresh Asian inspired slaw. Perfect as a yummy main dish or a side for potlucks, picnics or even the holiday dinner table.
- Slicing the Cabbage: The key to the best mouth feel of this slaw is to slice the cabbage into very thin slices, then chop the long slices into bite-size pieces. You can also grate the cabbage if you prefer it grated rather than fine slices. You can use a food processor with a thin slicing attachment or grater attachment. You can also use a box grater/slicer or a sharp chef’s knife to thinly slice the cabbage. We used a 2mm Cuisinart slicing blade disc with our Cuisinart Food Processor.
- Red/Purple Cabbage: You can substitute with all green cabbage if you wish.
- Green Onions: We love that extra flavor from green onions. If you are a fan, then use 6 green onions, if not a huge fan, then use 3 to 4.
- Matchstick Carrots: We bought a bag of pre-cut matchstick carrots from the grocery store. Feel free to cut your own into thin matchsticks or use grated carrots.
- Amount of Pure Maple Syrup: Our family was divided over the amount of maple syrup that was needed to create the perfect amount of sweetness. Feel free to use less or add more.
- Amount of Sea Salt: Our family was completed divided over the amount of sea salt that was needed to perfectly season the salad. We used ¼ teaspoon of sea salt. Start with less and add more as needed.
- Serving after Refrigerating: If serving after refrigeration, remove from the refrigerator at least 30 minutes before serving to allow the flavors to wake up. Stir well to redistribute the dressing. Refrigeration tends to dull flavors.
- Potlucks or Parties: We suggest not dressing the slaw until right before serving for optimum presentation. As with most creamy slaws, the cabbage tends to slightly wilt after being coated in the dressing. The flavor is still fantastic, but if you are looking for maximum presentation and that amazing crunch, then wait to dress until right before serving.
- Potlucks or Transportation: This slaw holds up well during transportation. We suggest not adding the dressing until right before serving to keep their fresh crunch.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered container.
This slaw does not freeze well.
Pantry Products:
- Tamari: We used San J Tamari Soy Sauce, Gluten Free, Reduced Sodium. You can substitute the tamari with reduced sodium soy sauce, Braggs Liquid Aminos, or Braggs Coconut Liquid Aminos. We recommend using reduced-sodium products.
- Molasses: We used Grandma’s Unsulfured Original Molasses. Feel free to use your favorite molasses. We do not recommend black strap molasses as it can sometimes be bitter. You can leave the molasses out of the dish if you wish. The molasses adds excellent depth of flavor and is reminiscent of brown sugar.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Ingredients
Salad Base Ingredients:
- 3 cups (6 oz.) thinly sliced purple cabbage
- 3 ¾ cups (8 oz.) thinly sliced green cabbage
- 1 cup matchstick carrots
- 4 to 6 green onions, thinly sliced *
- ½ cup julienne sliced red bell peppers
- ¾ cup julienne sliced fresh sugar snap peas (optional)
- 1/3 cup peanuts
Dressing Ingredients:
- ¼ cup + 1 Tablespoon peanut butter
- 3 Tablespoons reduced-sodium tamari*
- 1 Tablespoon + 1 teaspoon rice vinegar
- 2 Tablespoons distilled white vinegar
- 2 Tablespoons pure maple syrup (+/-) *
- 1 teaspoon lime juice
- ½ teaspoon molasses *
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ginger powder
- Pinch to ¼ teaspoon sea salt (+/-) *
Instructions
- Place all the Dressing Ingredients into a small bowl, whisk well until smooth and emulsified, set aside.
- Place all the Salad Base Ingredients into a large bowl, gently mix to evenly distribute the ingredients.
- Pour the dressing over the salad ingredients, mix well to thoroughly coat all the ingredients. Serve immediately and enjoy! Refrigerate leftovers.
