We love, love, love cabbage, and this dish hits the cabbage spot like no other. The beauty lies in the way the cabbage and onions roast until their natural sugars caramelize, creating a tender texture and a savory-sweet bite that begs for seconds. The spicy tahini sauce brings a bold, nutty kick with cheeky lemon zest and just the right amount of heat to wake up your palate.
You gotta give this one a try because it’s comfort-food in a single bowl: hearty, satisfying, and effortlessly plant-forward. Perfect for sharing on a cozy weeknight.
Tips for Success:
- Flavor Profile: This recipe is all about thinly sliced roasted cabbage and onions, then served with a spicy tahini forward sauce that melts in your mouth.
- Cabbage Amount: We used medium-sized green cabbage. Finely sliced cabbage which is approximately 10 cups packed. The finely sliced cabbage weighed 1 lb. 10 oz.
- Sliced Cabbage: We used 10 cups which will initially appear to be a lot of cabbage; however, after roasting in the oven, the cabbage (and onions) will reduce in size by approximately half.
- Dried Ground Sumac Berries: Sumac has an almost citrusy flavor with slightly lemon notes, but also an earthy undertone. It brightens flavors. You can leave it out, if you really don’t wish to buy it. We have other Middle Eastern recipes that use sumac if you are worried that you won’t use it up.
- Mix, Mix, Mix: When pouring the Seasoning Sauce over the cabbage and onions, mix, mix, mix until all the onions and cabbage slices are thoroughly coated.
- Maple Syrup: The Spicy Tahini Sauce is savory, if you need a little sweetness, feel free to place a few drops of maple syrup in the Spicy Tahini Sauce.
- Near the End Broiling: While broiling is not essential, it does give the dish a little extra “roasting” flavor. Be sure to watch carefully as the dish can burn quickly if not monitoring carefully under the broiler.
- Large Baking Sheet: We used a 14 x 20 baking sheet. Be sure to create an even layer. If you do not have a 14 x 20 baking sheet, use two separate regular-sized baking sheets. Broil (only) separately if using two baking sheets. If using two baking sheets be sure to switch the top baking sheet to the bottom and vice-versa after the initial 10 minutes of roasting.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.
- Amount of Sea Salt: Our family was completely divided over the amount of sea salt needed to properly flavor this soup. For most palates, we felt 1 ¾ teaspoons worked well. We suggest starting on the lower side (3/4 teaspoon) and build from there.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered air-tight container.
This dish does not freeze well.
Pantry Products:
- Tahini: We used Ziyad Premium Tahini (Sesame Paste). Feel free to use your favorite brand of tahini.
- Hot Sauce: We used Frank’s RedHot Original Hot Sauce.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Ingredients
Base Ingredients:
- 2 to 2.5 lb. [8 to 10 cups] thinly sliced green cabbage *
- 1 large yellow onion, thinly sliced [half moon slices]
Seasoning Sauce Ingredients:
- 3 Tablespoons water
- 2 Tablespoons tahini
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¼ teaspoon sweet paprika
- ¾ teaspoon sea salt (+/-) *
- 1/8 teaspoon black pepper (+/-)
Spicy Tahini Sauce Ingredients:
- 2 Tablespoons tahini
- 2 Tablespoons lemon juice
- 1 Tablespoon red wine vinegar
- 2 Tablespoons water
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon sweet paprika
- ½ teaspoon dried ground sumac berries (+/-) *
- ½ teaspoon hot sauce *
- Pinch to ½ teaspoon sea salt (+/-) *
Optional Topping:
- Chopped fresh parsley
Instructions
- Preheat the oven to 400 F, center rack.
- Place all the Seasoning Sauce Ingredients into a small bowl, mix well, set aside.
- Place the thinly sliced cabbage and onions into a large bowl, pour the Seasoning Sauce over top of the sliced cabbage/onions and thoroughly mix to evenly coat, then place the mixture onto a large (14 x 20) baking sheet, spread it out evenly across the baking sheet into a single layer.
- Place in a preheated 400 F oven for 10 minutes.
- In the meantime, place all the Spicy Tahini Sauce Ingredients into a small bowl, mix well and set aside.
- After 10 minutes, take the Cabbage/Onions out of the oven and toss around, then spread out evenly. Place back in the oven for an additional 10 minutes.
- After the additional 10 minutes, switch the oven from Bake to Broil. Broil for several minutes, just to lightly brown the Cabbage/Onions on top. Remove from the oven.
- Immediately plate the roasted Cabbage/Onions onto a serving platter, pour the Spicy Tahini Sauce over top. Mix, serve, and enjoy!
