Description
This Lebanese Roasted Cabbage and Onions with Spicy Tahini Sauce is a vibrant, crave-worthy dish built on ultra-thin slices of cabbage and onion that caramelize to perfection in a hot oven.

Base Ingredients:
- 2 to 2.5 lb. [8 to 10 cups] thinly sliced green cabbage *
- 1 large yellow onion, thinly sliced [half moon slices]
Seasoning Sauce Ingredients:
- 3 Tablespoons water
- 2 Tablespoons tahini
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ¼ teaspoon sweet paprika
- ¾ teaspoon sea salt (+/-) *
- 1/8 teaspoon black pepper (+/-)
Spicy Tahini Sauce Ingredients:
- 2 Tablespoons tahini
- 2 Tablespoons lemon juice
- 1 Tablespoon red wine vinegar
- 2 Tablespoons water
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon sweet paprika
- ½ teaspoon dried ground sumac berries (+/-) *
- ½ teaspoon hot sauce *
- Pinch to ½ teaspoon sea salt (+/-) *
Optional Topping:
- Chopped fresh parsley
Instructions
- Preheat the oven to 400 F, center rack.
- Place all the Seasoning Sauce Ingredients into a small bowl, mix well, set aside.
- Place the thinly sliced cabbage and onions into a large bowl, pour the Seasoning Sauce over top of the sliced cabbage/onions and thoroughly mix to evenly coat, then place the mixture onto a large (14 x 20) baking sheet, spread it out evenly across the baking sheet into a single layer.
- Place in a preheated 400 F oven for 10 minutes.
- In the meantime, place all the Spicy Tahini Sauce Ingredients into a small bowl, mix well and set aside.
- After 10 minutes, take the Cabbage/Onions out of the oven and toss around, then spread out evenly. Place back in the oven for an additional 10 minutes.
- After the additional 10 minutes, switch the oven from Bake to Broil. Broil for several minutes, just to lightly brown the Cabbage/Onions on top. Remove from the oven.
- Immediately plate the roasted Cabbage/Onions onto a serving platter, pour the Spicy Tahini Sauce over top. Mix, serve, and enjoy!
