We loved this easy to make Mexican pizza. It was crazy delicious and fun to eat. Plus, each person can make their own pizza using their favorite ingredients; a great dinner for picky eaters.
We’ve listed just some of the delicious toppings that we’ve used, but there are SO many more Mexican toppings that would make for a fantastic pizza. Let your imagination run wild – anything goes!

Tips for Success:
- Flavor Profile: This homemade Mexican Pizza is a Whole Food Plant Based nod to Tlayudas. Please note this recipe is not authentic Tlayudas. Tlayudas are sometimes spelled clayuda. They are traditional Oaxacan cuisine, mostly consisting of a large, partially fried or toasted tortilla covered with a spread of refried beans, asiento, lettuce or cabbage, avocado, meat, Oaxaca cheese, and salsa.
- Amounts of Ingredients: This recipe is for the construction of a Vegan Mexican Pizza. The amounts on the ingredients are completely within the cook’s control on which ingredients are used and how much.
- Amount of Ingredients: Adjust the amount of ingredients to correspond with the thickness and size of the tortilla used.
- Our Vegan Mexican Pizza Construction: Our Vegan Mexican Pizza consisted of the following:
- 10-inch Homemade Corn Tortilla made slightly thicker than normal so it could hold all the ingredients we piled on it and wouldn’t break when picked up.
- Layer of our Easy Oil-Free Refried Beans
- Layer of chopped iceberg lettuce
- Sprinkle chopped tomatoes
- 3 generous dollops of mashed avocadoes seasoned with sea salt and lime juice
- Generous spoonfuls of salsa
- Sprinkle finely chopped fresh cilantro
- Sprinkle chopped green onions
- Corn Tortillas: We made our own Homemade Corn Tortillas recipe. We made the large tortillas slightly thicker than normal so it could hold up to all the ingredients. Feel free to use your favorite corn tortilla recipe or use store bought.
- Refried Beans: We used our Easy Oil-Free Refried Beans. Feel free to use your favorite refried beans recipe (oil-free) or store bought.
- Vegan Sour Cream: While not traditional, vegan sour cream is a great addition. Feel free to use your favorite store-bought vegan sour cream, homemade recipe, or use our Vegan Sour Cream recipe.
- Vegan Nacho Cheese: While not traditional, vegan nacho cheese is a great addition. Feel free to use your favorite store-bought vegan nacho cheese, homemade recipe, or use our Nut Free Vegan Nacho Cheese Sauce.
- Salsa: While not traditional, salsa is a great addition. Feel free to use your favorite store-bought salsa or homemade recipe.
- Customizable: You can easily swap out and use your favorite ingredients.
Leftovers and Freezing:
Dressed leftovers should be stored in the refrigerator and eaten within the day. Store in a covered container.
This Mexican Pizza cannot be frozen.

Ingredients
Base Ingredients:
- 10-inch corn tortillas *
- Oil free refried beans
Traditional Ingredients:
- Chopped iceberg lettuce (or greens of choice)
- Chopped avocadoes (or guacamole)
- Freshly chopped cilantro
- Salsa
Optional Add-In Ingredients:
- Chopped tomatoes
- Chopped green or red onions
- Vegan sour cream *
- Vegan nacho cheese sauce *
Instructions
- Place a heated 10-inch corn tortilla on a flat surface or plate.
- Place a layer of vegan refried beans over top of the corn tortilla.
- Layer in any of the Traditional Ingredients and/or Optional Added Ingredients.
- Cut into fourths with a pizza slicer or knife. Enjoy!
