Tips for Success:
- Flavor Profile: This Healthy Viral Creamy Garlic Butter Ditalini Pasta dish is full of delicious flavors. Super easy to make, this tasty dish is made of savory garlic dreams.
- Sauce Flavor: The sauce is mostly flavored from the garlic; however, the flavor is not overpowering. It is rather lightly flavored. Feel free to ramp up the garlic if you wish.
- Elevate the Dish: If you wish to really elevate the dish, when serving individual portions, add a generous sprinkle of Vegan Parmesan Cheese does the trick nicely.
- Almond Butter Substitutions: You can try the typical substitutions like silken tofu, white beans, or other nuts or seeds with the understanding that the flavor and texture will be impacted accordingly. We have not tested any substitutions.
- Ditalini Pasta: This internet sensation viral dish uses ditalini pasta, feel free to substitute with any short cut pasta like elbow macaroni, etc.
- Gluten Free Pasta: Feel free to use your favorite short-cut GF pasta in this dish, just know that the dish may turn out slightly thicker as gluten free pasta tends to leach out quite a bit of starch.
- Amount of Sea Salt: Our family was completely divided over the amount of sea salt that was needed to properly season this dish. Most wanted more; simply because they were eating it plain without any Vegan Parmesan Cheese; the ones who were satisfied with the amount of salt in the recipe (1 tsp), topped theirs with Vegan Parmesan Cheese.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
- Table Salt: If using table salt, you should use less table salt than the amount listed in the ingredients as sea salt crystals are larger than table salt crystals. Since table salt crystals are very fine, less table salt is required to season a dish. We would suggest starting with about 1/4 to 1/2 the amount of sea salt listed. You can always add more salt but cannot take it away. We recommend using sea salt as it is less refined than table salt.

Leftovers and Freezing:
Leftovers will generally keep 5 days in the refrigerator. Store in a covered air-tight container.
This dish can be frozen.

- Vegetable Stock: We use Pacific Organic Low Sodium Vegetable Stock. We love this brand because it is Whole Food Plant Based compliant, as it does not contain MSG, has no oil, and does not contain any highly-processed ingredients. Feel free to use your favorite vegetable broth.
- Almond Butter: We used Artisana Organics Raw Vegan Almond Butter. Feel free to use your favorite raw almond butter in this recipe. Read the label, make sure the only ingredient is raw almonds. Do not use a salted or sweetened almond butter.
- Sea Salt: Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.

Description
This Healthy Viral Creamy Garlic Butter Ditalini Pasta is the kind of comforting, flavor-packed dinner that tastes indulgent but keeps things light.
Ingredients
Base Ingredients
- 2 Tablespoons runny almond butter *
- 1 Tablespoon minced garlic
- 2 Tablespoons flour (of choice)
- ¼ cup water
Sauce Ingredients
- 2 cups low-sodium vegetable broth *
- 1 cup water
- ¼ cup nutritional yeast
- 2 Tablespoons unsweetened plain plant milk
- ½ teaspoon lemon juice
Spice/Herb Ingredients
- ½ teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- ¼ teaspoon dried ground mustard powder
- Pinch celery seed
- Pinch dried dill weed
- ¼ to 1 teaspoon sea salt (+/-) *
- Pinch black pepper (+/-)
Other Ingredients
- 2 cups uncooked ditalini pasta *
Optional Toppings
- Chopped fresh parsley
- Vegan Parmesan Cheese
Instructions
- Place all the Spice/Herb Ingredients into a small bowl, mix well, set aside.
- Cook the ditalini pasta according to package directions, until almost done (near al dente), drain, and set aside.
- In a large skillet, add the almond butter, minced garlic, and flour, sauté over medium-high heat for 2 to 3 minutes, stirring constantly. It will feel like you are just stirring around clumpy garlic, flour, and almond butter. That is fine, it is just important to cook out the flour flavor, just keep stirring and pressing the flour and garlic into the almond butter.
- Then add ¼ cup water and water sauté for 3 to 4 minutes. It still may be clumpy, that is fine.
- Next add all the remaining Sauce Ingredients and the Spice/Herb Mix, stir well, scraping the bottom of the skillet with a stiff wooden spoon to get up any flour that may have stuck to the bottom of the pan. Continue to stir to thoroughly incorporate the almond butter/flour/garlic into the liquids. Bring to a boil, then lower to a simmer until the mixture starts to very slightly thicken. Stir well and take the time to ensure that all the almond butter has thoroughly dissolved into the sauce.
- Cook the sauce for 5 minutes, then add the al dente cooked pasta, bring to a boil, then immediately lower to a simmer, stir well to coat all the pasta, allow to cook for 2 to 3 minutes, stirring constantly. Gently scrape the bottom of the skillet to ensure the ditalini pasta does not stick. The dish will appear soupy, that is fine.
- Remove the skillet from the stove, cover with a lid, then let rest for 10 minutes. This will allow the pasta to continue to cook (off the heat) until tender. This also allows the pasta to soak up the sauce.
- After 10 minutes, stir, then serve plain or with a generous sprinkle of Vegan Parmesan Cheese and/or chopped fresh parsley.
