Description

This Vegan Strawberry Chia Pudding is a classic, spoonable breakfast treat that’s equal parts creamy, fruity, and satisfying.

Ingredients

Fruit Ingredients:

  • 1 ½ cups strawberries (fresh or frozen-thawed) *

Base Ingredients:

  • 16 oz. (2 cups) vegan unsweetened plain plant yogurt (or vanilla flavored) *
  • 3 Tablespoons pure maple syrup (+/-) *
  • 2 teaspoons vanilla
  • Pinch to 1/8 teaspoon sea salt *
  • ½ cup chia seeds *

Optional Toppings:

  • Fresh fruit such as chopped strawberries, blueberries, blackberries, etc.
  • Granola
  • Shredded coconut, chopped nuts or seeds

Instructions

  1. Place the strawberries into a high-speed blender, blend until perfectly smooth, set aside.
  2. Place all the Base Ingredients into a medium-sized bowl, mix until smooth, then stir in the strawberry puree. Mix well.
  3. Stir in the chia seeds. Mix well.
  4. Pour into a glass bowl, cover and refrigerate overnight or at least 4 hours.
  5. Serve with chopped fresh fruit, granola, nuts, seeds, or shredded coconut

Sea Salt:  Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
