Vegan Peanut Butter Mousse with Chocolate Shell Topping

Description

Indulge in the luscious delight of this Vegan Peanut Butter Mousse crowned with a delectable Chocolate Shell Topping, a delightful rendition of the trending TikTok sensation!


Ingredients

Scale

Base Ingredients:

  • 1 cup natural peanut butter
  • ½ cup + 1 Tablespoon unsweetened plain plant yogurt
  • ¼ cup vegan cream cheese (+/-) *
  • 3 to 6 Tablespoons pure maple syrup (+/-) *
  • 1/8 teaspoon sea salt (+/-) *

Optional Topping Ingredients:

  • ¼ to ½ cup vegan chocolate chips *
  • Sprinkle chopped peanuts

Instructions

  1. Place all the Base Ingredients into a bowl, mix vigorously until the mixture is smooth and emulsified. Taste test, adjust ingredients, if needed.
  2. Place the mousse mixture into 4 glass jars (or one large glass bowl) and refrigerate.
  3. Determine if sprinkling with chocolate chips or creating a chocolate magic shell.
  4. Magic Shell:  Place the vegan chocolate chips (or chocolate) into a glass bowl. Place into the microwave and microwave for 15 seconds, then stir. Place back into the microwave and microwave for 10 seconds, stir and repeat until all the chocolate has been completely melted. Once the chocolate has melted, pour the melted chocolate over top of the mousse mixture.
  5. Sprinkle Chocolate Chips:  Sprinkle a layer of chocolate chips over top of the mousse.
  6. Sprinkle with chopped peanuts. Repeat for the remaining mousse containers.  Cover the individual containers and refrigerate for one hour or overnight, then serve and enjoy.
