Lebanese Roasted Cauliflower with Spicy Lemon Hummus Sauce

Our Lebanese Roasted Cauliflower with Spicy Lemon Hummus Sauce is a Whole Food Plant Based nod to the popular Lebanese dish but with a baked twist and oil free sauce.


  • Cauliflower florets (fresh or frozen)
  • Sprinkle sea salt *
  • Sprinkle black pepper
  • Sprinkle sweet paprika (for color)

Sauce Ingredients:

  • ½ cup hummus *
  • 2 Tablespoons + 1 teaspoon lemon juice (+/-)
  • ½ to 1 ½ teaspoons hot sauce (+/-) *
  • 1 teaspoon water (+/-)
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1/8 teaspoon sea salt (+/-) *


  • Chopped fresh cilantro or parsley


  1. Preheat the oven to 400 F.
  2. Line a large baking sheet with parchment paper, set aside.
  3. Place fresh or frozen cauliflower florets onto the baking sheet, space them apart, sprinkle with sea salt and black pepper. Place in the oven (center rack) and roast for 15 to 30 minutes or until tender.  The timing is largely dependent upon fresh or frozen cauliflower, the size of the florets, and the desired tenderness.
  4. In the meantime, make the Sauce by combining all the Sauce Ingredients into a bowl, whisk well to combine, set side. See blog post notes about the Amount of Sauce
  5. Once the cauliflower has been roasted to the desired tenderness, remove the baking sheet from the oven, sprinkle with a tiny bit more sea salt, then transfer the roasted cauliflower to a serving platter.
  6. Serve individual servings with a generous drizzle of sauce and freshly chopped cilantro or parsley.

*We recommend doubling the sauce for a large roasted cauliflower. This will create 5-6 servings with a generous amount of sauce.

*Sea Salt:  Please adjust the sea salt based upon your family’s sea salt preferences and/or based upon dietary needs.
