Description

This AH-MAZING Guacamole is packed with lip-smacking ingredients, and of course, our favorite star ingredient, the avocado! It’s SO fast and easy with incredible flavor, creamy texture, and mind-blowing taste. You’ll be doing your happy dance! Whole Food Plant Based recipe, vegan, no oil, no refined sugar, no highly processed ingredients, and gluten free.


Ingredients

  • 4 avocadoes, diced into 1-inch pieces
  • 34 Tablespoons red onion, finely minced
  • ½ cup salsa (or ½ cup tomatoes, seeded and chopped)
  • 23 Tablespoons fresh cilantro, finely chopped
  • 1 jalapeno pepper, finely minced
  • 1 lime, juiced (about ¼ cup)
  • Pinch sea salt (+/-)
  • Pinch black pepper (+/-)

Optional Toppings:

  • Tomatoes, seeded and finely diced
  • Red onions, finely diced
  • Jalapeno rings, finely sliced and seeded
  • Sprinkle of lime zest
  • Cilantro, rough chop

Instructions

  1. Prep all your veggies, saving the avocadoes for last. Avocadoes tend to brown quickly once they are cut open.
  2. Place all the ingredients listed above into a large bowl, except the avocadoes and lime juice.
  3. Then proceed to work with one avocado at a time. Take the avocado and slice it in half from top to bottom, carefully remove the pit.  Then slice the avocado in inch slices from top to bottom, while still inside the avocado skin.  Slice right up to the skin, but do not pierce it. Then slice the avocado from side to side, while still in the avocado skin. Slice right up to the skin, but do not pierce it.  Then take a large thin edged spoon and starting on the side of the avocado, carefully pop out the sliced avocado chunks into a large bowl.  Sprinkle with a tiny bit of the ¼ cup lime juice.  Then repeat this same process for the remaining 3 avocadoes.  If any remaining lime juice is left, add over top of the avocadoes.
  4. Mix well. If you prefer less texture, mash the avocadoes.  If you prefer a lot of texture, leave the avocadoes in chunks.
  5. Please note that the salsa tends to color the avocadoes. It takes amazing, but if you prefer more green color, then use diced tomatoes rather than salsa.
  6. Place the guacamole in an appropriate sized bowl and sprinkle with the Optional Toppings, if desired. It dresses it up nicely.
