Ingredients:
- 1 cup finely diced cantaloupe
- 1 cup finely diced yellow kiwi (or green kiwi)
- 1 cup finely diced strawberries
- 1 cup peeled and finely diced apple *
- 1 ½ teaspoons lemon juice
- ¼ cup apricot preserves/jam *
- ¼ teaspoon vanilla (optional)
Serving Ideas:
- As a dip with Baked Cinnamon Chips
- Over oatmeal, pancakes, or ice cream
- Layered in a parfait
Instructions
- Peel, then finely dice the apple, place into a small bowl with the lemon juice, mix the apples really well with the lemon juice.
- Place all the finely diced cantaloupe, kiwi, and strawberries into a medium-sized bowl, set aside.
- Drain the diced apple pieces (discard any excess lemon juice, if any) and place into the bowl with the diced cantaloupe, kiwi, and strawberries. Gently mix to evenly distribute.
- Place ¼ cup of apricot jam (or preserves) into a small bowl, add the vanilla, stir well, then pour over the diced fruit. Gently mix well.
- To serve as a dessert appetizer, place the Cantaloupe Kiwi Fruit Salsa into a small bowl, then surround with the Baked Cinnamon Chips.
