Description

Bursting with vibrant Italian flavors, this delightful Low-Fat Marinated Italian Bean Salad is a celebration of creamy beans, zesty red wine vinegar, and a medley of aromatic Italian herbs.

Salad Ingredients:

  • 1 – [ 15.5 oz. can ] cannellini beans, drained and rinsed *
  • 1 – [ 15.5 oz. can ] kidney beans, drained and rinsed *
  • 1 – [ 15.5 oz. can ] lima beans, drained and rinsed *
  • 1/3 to ½ cup finely diced red onions
  • 3 to 4 celery ribs, small dice
  • 1/3 cup diced roasted red bell peppers, drained
  • 2 to 3 Tablespoons chopped fresh parsley 

Dressing Ingredients:

  • 1/3 cup red wine vinegar (+/-) *
  • 1 teaspoon lemon juice
  • 1 teaspoon pure maple syrup (+/-) *
  • 1 Tablespoon nutritional yeast
  • 1 teaspoon dried basil (+/-)
  • 1 teaspoon dried oregano (+/-)
  • 1 teaspoon dried ground mustard powder
  • 1/8 teaspoon dried ground fennel powder (optional)
  • ½ teaspoon onion powder (+/-)
  • 1 teaspoon garlic powder (+/-)
  • Pinch to 1 teaspoon sea salt (+/-) *

Instructions

  1. Place all the Dressing Ingredients into a small bowl, whisk well until smooth and emulsified, set aside.
  2. Place all the Salad Ingredients into a large bowl, mix well to combine, then pour the Dressing over top, mix well. Refrigerate for 10 minutes (or longer), then serve and enjoy!
