Description

This Fast and Easy Salsa Bean Skillet is the ultimate weeknight winner: budget-friendly, creamy, hearty, and irresistibly delicious.


Ingredients

Scale

Skillet Ingredients:

  • 2 – [ 15.5 cans ] pinto beans, undrained *
  • 1 cup salsa (of choice) *
  • ½ cup corn (optional)

Spice/Herb Ingredients:

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon regular chili powder (+/-) *
  • 1/8 teaspoon cumin (+/-)
  • 1/8 teaspoon smoked paprika (+/-)
  • 1/8 teaspoon coriander (+/-)
  • 1/8 teaspoon chipotle powder (+/-)
  • Pinch to ¼ teaspoon sea salt (+/-) *

Serving Ideas:

  • Steamed Rice
  • Avocados
  • Tortilla Chips
  • Chopped fresh cilantro


Instructions

  1. Place all the Spice/Herb Ingredients into a small bowl, mix well, set aside.
  2. Please all the Skillet Ingredients and Spice/Herb Mix in the large skillet, stir well to evenly distribute. Simmer for 10 minutes (or longer) until some of the liquids have reduced. Serve and enjoy!
