  • 1 cup finely diced yellow onions
  • 2 Tablespoons minced garlic
  • 2 Tablespoons tomato paste
  • 3 cups reduced-sodium vegetable broth *
  • 3 cups water
  • 1 – [ 14.5 oz. can ] petite diced tomatoes
  • ¼ cup nutritional yeast
  • 1 Tablespoon white miso *

Add-In Ingredients:

  • 1 – [ 15.5 oz. can ] white beans, drained and rinsed *
  • 5 oz. baby spinach, chopped *
  • 2 teaspoons lemon juice

Spice/Herb Ingredients:

  • 1 teaspoon onion powder
  • 1 ½ teaspoons garlic powder
  • 2 Tablespoons dried minced onions
  • ¼ teaspoon sweet paprika
  • ½ teaspoon chili powder *
  • 2 teaspoons dried oregano
  • 1 ½ teaspoons dried basil
  • 1 teaspoon dried parsley
  • ½ to 1 ½ teaspoons sea salt (+/-) *
  • ¼ teaspoon black pepper
  • 1/8 teaspoon crushed red peppers (+/-)

Other Ingredients:

  • 2 ½ cups cooked short-cut pasta (of choice) *

Optional Toppings:

Instructions

  1. Cook the pasta according to package directions, rinse well with cold water, set aside.
  2. Place the Spice/Herb Ingredients (except the crushed red pepper) in a small bowl, mix well, set aside.
  3. In a large stock pot, add the diced onions, sauté over medium heat until they begin to soften, approximately 7 to 9 minutes.  Add a tablespoon or so of vegetable broth or water if they start to stick and/or to prevent burning.
  4. Add the minced garlic and tomato paste to the pot, stir constantly for one minute.
  5. Add all the remaining Base Ingredients and Spice/Herb Mix, bring to a boil, stir well, then lower to a simmer.  Simmer for 5 minutes.
  6. Add all the Add-In Ingredients and crushed red pepper, simmer for 3 minutes. Remove from the stove and allow to set for 5 minutes to allow the flavors to marry.
  7. To serve, place the pasta in a bowl, then ladle the hot soup over top. Serve with chopped fresh parsley and/or Vegan Parmesan Cheese and crusty bread or flatbread.
